New recipe Anyone??

Just wondering if anyone has any good recipes.  I just tried this recipe and it was very good.  It comes from a Once A Month Cooking cookbook.  When I make it again I will double the recipe, serve it for supper and then portion out and freeze the rest.  I have tried the OAM cooking before and it is sooo convenient!  When I found this cookbook (an ebook that can be bought on line) I knew it was a good thing! No more wondering "what should I eat?"  cause it's all ready and just a couple of minutes away.


If anyone has any tried and true recipes I'm always looking.

Sweet and Sour Chicken 

With rice and green peas 

Recipe makes 6 frozen meals. This recipe can be used with either white or 

brown rice. The brown rice will add more nutrients, with fewer calories. 

Check the rice package for cooking directions. 

Shopping list: 

Staples: 

Vinegar
Honey
Cornstarch

Soy Sauce
Brown Rice

 

Recipe: 

In a small saucepan mix the following: 

1/2 cup pineapple juice

1/4 cup chicken broth

3 Tablespoons honey

1 Tablespoon soy

1 Tablespoon corn starch 

Cook sauce until it thickens slightly, and becomes clear. Set aside. 

Cut 1 1⁄4 lb boneless, skinless chicken breast into 3/4 inch cubes. Cut 1⁄2 

onion into 1⁄2 inch chunks. 

Spray a wok or large skillet with non-stick spray or add 2 tablespoons olive 

or canola oil. Brown the chicken pieces.   

Add the sauce and onion pieces to the chicken, and simmer, covered, for 

about 1⁄2 hour or until chicken chunks are tender.  

While the chicken is cooking, place 1 cup brown rice in rice cooker or 

medium sauce pan. Add 1 1⁄2 to 2 cups of water (depending on package 

directions) and pinch of salt if desired. Add lid and coo****il rice is done, 

about 45 minutes. 

When chicken is tender, uncover and allow to cool. When mixture has 

cooled add: 

3/4 cup drained pineapple chunks

1 green pepper plus 1 red or orange pepper cut into chunks


 

Do not cook after vegetables and pineapple have been added. They will 

cook when the lunch is heated in the microwave. 

Spoon rice, evenly divided, into 6 entrée sized containers. (Keep your rice 

in one corner of the container) Open 2 packages of green peas or pea 

pods and pour into containers. Add chicken-pineapple mixture on top of 

rice. Add lids, making sure seal is tight. Place containers in freezer.

There is a site called "The world according to eggface" She is a gastric bypass person who has changed dozens of recepies to suit wls people. Her food is awesome.

Do you remember where you got the cookbook? I have Natalie Treadwell's OAM recipes (Food for Life)  but I have never done it up because i think it would a lot of fun to do it in a group.....It even includes a shopping list and you end up with a month of meals for a family of 4. Plus it saved lots of money from not going to the grocery store as often.

I like Eggface too. There is also the hungrygirl site. She has a cookbook out- saw it at Chapters.

 Charline, I downloaded it from the internet.  You can get all the info at 

http://www.EasyDoesItDiet.com   I believe the authors name is Jonni Good.  I agree that the group thing would be fun.  Before my daughter moved over 2000 miles away (grrrr) we would get together and do the regular OAMC - actually we only did it once or twice - but it was fun and ohh so nice to have meals all prepared.  I'm not a big fan of frozen and prefer fresh, so I am very picky about what types of food I would freeze.  I really miss having her live just a 5 minute walk away.  Is that the same Natalie Treadwell that lived in Hartland NB?  I will have to see if I can find a copy of her book - Thanks - Suzanne
