Lentil and Chickpea soup

Hey everyone, I am on a creamed-low fat- high fibre soup kick. Preparing for my puree stage. Anyone have any really good tasty soup recipies that I can convert to high protien, low fat?  All new entries will be made, eaten and appreciated.  I have some to share too. Beware, I cook with alot of currie and chillies.  Not so great for roseacha but it works on the gut.  Hail to the soup nazi. Sugarbear

Here is one from my cousin - haven't tried it myself yet but sounds good.  I often just throw things together for soup - watch alot of the Food Network and take bits of recipes and mix up flavours.  Will check out my Soup Cookbook I got for Christmas from my prayer pal too (wonder if they knew I was going into surgery ... hmmm)

Title: Black Bean and Ham Soup

Description:
This is what I came up with, using bits and pieces from a bunch of different recipes I found online. I think this is one of the best things I've ever made!

Ingredients:
1 celery stalk
1 tsp chopped garlic
¼ c chopped green onion
2 tbls olive oil
1 900 ml carton of low sodium chicken stock
2 Bay leafs
Dash of curry powder and dried chillies
¼ c chopped fresh parsley
1 large or 2 small carrot chopped fine
1 hambone
2 c diced ham
2 540 ml cans black beans DRAINED
1 540 ml can Aylmer’s Original tomato mix
Handful of brown rice


Directions:
Saute onion, garlic and celery in olive oil. Add chicken stock, spices, and ham bone; bring to a boil and simmer 2 hours.
Puree drained beans and tomatoes, add to soup along with carrot and brown rice. Simmer 45 minutes to 1 hour.

Today is soup day for me as on Sunday I create. I am doing my one week liquid diet next week so these high protien soups are the best. This one sounds delish. Thanks a  bunch. Sugarbear

I make a lentil soup. I usually use some stewing beef but if you don't want to use the meat, you could always just use broth, either chicken, beef  or vegetable, 2 cartons. Bring to a boil add whatever veggies you want. I use carrots, celery, corn. For seasoning I add thyme about one teaspoon. I also add one cup of red lentils. Simmer for 25 minutes. I sometimes add 2 TBSP of curry powder as well.

Very tasty and simple to make.
