Mostly Vegetarian

I have decided to limit our meat to organic grain/apple fed chicken & pork that I buy at the Farmer's market. I went to the bulk barn yesterday & stocked up on beans; they are such an inexpensive source of protein. Chicken @ the Farmer's market-$55.00, beans at the bulk barn, $18.00. What a difference. I would rather eat less organic chicken than eat the hormone boosted supermarket stuff.

I will be cooking a chicken for supper tonight so we'll see how that goes. My kids are all for the switch to more grains & beans as well; my 13 year old son, also known as "the Morph", is even on board.

Well have to go get ready for church. I will share how my chicken tasted & if it was worth the switch. Have a good day everyone.

You would have loved Catherine's soup for after the meeting on Sat!  Had lots of veggies - carrots, green peppers, celery, onions, tomatoes etc with black beans (some of us then added turkey sausage and cheese for more protein) = very yummy!!

Sounds yummy. My chicken turned out good; defininately better than supermarket chicken. I also made some spicy mung beans and rice for tomorrow. That was also very tasty. My friend Katherine lent me a cookbook called extending the table written by some missionaries. It has recipes from all over the world; can't wait to try some more.

What are mung beans? Have you ever used TVP? (texture vegetable protein) it's great  and cheap. When I was a vegetarian, I used to use it in tomato sauce (would work in almost any sauce) in place of hamburger.

I've been looking for mung beans forever. Where did you find them?  Canned or fresh?
