CONGRATULATIONS on the 120lbs lost....good to hear you are doing so well.  Are  you still going to any support groups?  I have not found one in Meridian, but have decided to try to attend the one in Tuscaloosa after my Realize band surgery which is going to be happening this coming Monday the 18th.

Hey everyone....been a while since I posted but wanted to let everyone now I'm doing great!  I've lost 120 pounds since September 18th....feeling wonderful, loving the new me.  Will update my profile shortly with some new me pics, mostly taken in Hawaii during the last couple weeks.

If you are planning on coming down to Nashville on the 19th for the football game against Vandy. Instead of tailgaiting close to Centennial Park, come on over to the park and walk in The Nashville Walk from Obesity. Registration starts @ 9:00 and the walk starts @ 10:00, then after the walk you can go and enjoy the game. You can also register on-line @ www.walkfromobesity.com

Linda, how are you doing?  I have had you in my prayers and thoughts.  I started my liquid diet a couple days early, thought it might help get things going inside! LOL  This is my first day on liquids, so far so good. 
Will give you a call this week.  Hope you are recouping well, walking much and sipping a lot!

1/2 lb lean ground beef
1/2 lb ground turkey
or
1 lb lean ground beef
1/4 c sweet onion, finely chopped
1/4 c bell pepper, finely chopped
1/2 can ro-tel tomatoes, drained
1/4 c breadcrumbs or oatmeal, which ever you prefer
1 egg, beaten
1/4 tsp cumin
1/2 tsp southwest seasoning
salt & pepper, to taste
1/2 c 2% shredded cheddar
6 - 8 jalapeno slices (from a jar)

*** I use 1 lb lean ground beef, hubby doesn't like ground turkey

Preheat oven to 350 degrees, mix all ingredients well. In a loaf pan, place 2 -3 slices of bread (depending on size of pan, this catches all the grease). Place meat mixture into pan and form loaf. Bake until juices run clear. At this point, top with shredded cheese and jalapeno slices and return to oven until cheese is melted.

I made this recipe up a few years ago. We were going to a family reunion and I was to take a meatloaf. I had bought the ingredients the day before, thinking I had meatloaf seasoning at home. When I started to make the meatloaf, I did not have the seasoning pack. I just threw a few things from the pantry together and called it Tex-Mex Meatloaf. It was a huge hit, several wanted the recipe and I have been requested to bring it several times since. My husband loves it! Funny what we can come up with in a pinch!
