Tex-Mex Meatloaf..YUMMY!
1/2 lb lean ground beef
1/2 lb ground turkey
or
1 lb lean ground beef
1/4 c sweet onion, finely chopped
1/4 c bell pepper, finely chopped
1/2 can ro-tel tomatoes, drained
1/4 c breadcrumbs or oatmeal, which ever you prefer
1 egg, beaten
1/4 tsp cumin
1/2 tsp southwest seasoning
salt & pepper, to taste
1/2 c 2% shredded cheddar
6 - 8 jalapeno slices (from a jar)
*** I use 1 lb lean ground beef, hubby doesn't like ground turkey
Preheat oven to 350 degrees, mix all ingredients well. In a loaf pan, place 2 -3 slices of bread (depending on size of pan, this catches all the grease). Place meat mixture into pan and form loaf. Bake until juices run clear. At this point, top with shredded cheese and jalapeno slices and return to oven until cheese is melted.
I made this recipe up a few years ago. We were going to a family reunion and I was to take a meatloaf. I had bought the ingredients the day before, thinking I had meatloaf seasoning at home. When I started to make the meatloaf, I did not have the seasoning pack. I just threw a few things from the pantry together and called it Tex-Mex Meatloaf. It was a huge hit, several wanted the recipe and I have been requested to bring it several times since. My husband loves it! Funny what we can come up with in a pinch!
