Good morning everyone. I hope you all had a wonderful Thanksgiving, enjoyed your family and friends and made good food choices. I have found a couple of good recipes for those parties we are all going to be attending (that are weight loss friendly). Here is one I plan to try this weekend at our Memorial Tree Lighting service with work.
Cheesecake Cups
4 oz lowfat cream cheese, room temp
1/2 lowfat sour cream
enough splenda (or what ever you use) to equal 2 Tbsp sugar
2 pks Phyllo Shells, thawed
1 can mandarin oranges, drained well
1 kiwi, peeled and sliced (rather thin). Cut slices across both ways, to form triangle shapes.
Mix cream cheese, sour cream and sweetener, until smooth and creamy. Spoon or pipe into phyllos cups. Top with 1 mandarin orange segment and 1 kiwi triangle. Store in frig until ready to serve.
I can't remember the nut values but I will go back and look it up later. I do remember it had like 65 calories per cup, just can't remember the rest. They were really pretty plated.
