Spinach Salad Recipe
We are having Thanksigiving dinner at my MIL's tonight. Pretty much the only thing healthy will be the turkey...lol. I found this recipe for Spinach Salad, it sounds yummy and I thought it would go well with the turkey. My hubby, his aunt and I will probably be the only three there that will eat it. At least we will have a healthier option to all the high fat, high sugar foods that will be available. Don't get me wrong, my MIL is a WONDERFUL cook. She just has a lot of Paula Dean in her....(butter, butter, butter and then some cream cheese) lol!! Enough rambling, here is the recipe:
1 bag organic spinach
1 quart fresh strawberries, sliced
2 oz crumbled blue cheese or Feta
1/3 c roasted pecans, chopped
Dressing
2 TBSP Fresh lime juice
2 TBSP honey
1 TBS Extra Virgin Olive Oil (cold pressed)
1/4 tsp ginger
Layer first 4 ingredients in order. Whisk las four ingredients together and drizzle over salad. Toss and serve.
Due to only 3 of us (more than likely) eating it, I cut the recipe in half and am saving the other half of the ingredients to make at our house for Thanksgiving day.

I ate that identical salad in Kona, Hawaii last May at a restaurant where everything was grown in their garden....the name of the restaurant escapes me at this moment. It was so wonderful. I shall never forget that salad or the idyllic spot in which it was eaten - by a most gorgeous park with a HUGE Banyan tree, lighthouse and old courthouse!
