I got up feeling all Betty Crocker this morning...lol!!! I made Jam Bars and Sausage Casserole for dinner tonight. Plan to serve the casserole with soem green salad and rolls. Recipes follow:

Sausage Casserole

1/2 lb turkey breakfast sausage
1/2 sweet onion, diced
1 can mild ro-tel tomatoes (do not drain)
1 can 98% FF cream of mushroom
Wheat Pasta ( I use Rotini style)
2 oz light velveeta, diced into small squares)
balck pepper, to taste

Preheat oven to 350 degress. In a large skillet, brown crumbles sausage and onions. Drin and rinse well. Return to skillet, add tomatoes (juice and all), cream of mushroom soup, diced velveeta and black pepper. Over medium low heat, coo****il cheese melts and cheese and soup are blended well. While sausgae mixture is cooking, boil pasta in sal****er. When done, drain and return to pan. Add sausage mixture over pasta stiring well. Spray a 9 X 13 glass dish with pam. Pour sausage and pasta mixture into dish. Top with a sprinkle of cheddar sheese. Bske until bubbly and cheese is browned slightly.


Jam Bars

1 cup naturally sweetened preserves or jam (such as Pulaners All Fruit, most of the time, I have used sugar free smucker. It works just as well but  leaves a slight after taste from the artificial sweetener))
1/2 cup butter
2 eggs
2 tsp vanilla
1 cup wheat flour (I use regular if I do not have wheat)
2/3 cup oatmeal
1/2 tsp cinnamon
1/2 c fruit optional (such as blueberries)

Preheat oven to 350 degrees. Beat eggs, mix in room temp jam and butter. Mix together dry ingredients, addign to we ingredients. Stir well. Pour into a sprayed 9 X 9 or 8 X 12 for thinner bars. Spread evenly in pan, bake at 350 for 15 - 20 minutes depending on pan size.
