What's Cooking 8-19-08

I baked a ham last night for tonight.  Also have some green tomatos think I will fry.  I know not to healthy but they sure are good.  I have some fresh greenbeans and prob will do some cheesy taters to go along with it.  I have my measuring cups ready.  Not gonna use the word diet but I started really trying to take control of my food choices yesterday and did really well!  I also have started my water back.  Hopefully I can get back on track!

One week post-op menu:

Lunch was 3 oz pureed cream of potato soup.
Afternoon snack. 4 oz. low sugar cranberry juice
Supper is 3 oz of refried beans

Picking up speed to the loser's bench! LOL!

How'd the refried beans do for ya?  They were a staple in my diet for weeks.  LOL.

I snuck in a slice of cheese and microwaved the cheesy refried beans and then stirred it all together. They tasted almost sinful. So I could definitely do this every night!

That is funny about the cheese as I sneaked a little cheese into my refried beans too.  Makes them better and adds a little more protein.  Glad they are working for you.

I fixed tuna salad tonight for dinner, and we had it on Sara Lee Delightful Wheat bread.  Hubby had some mandarin oranges with his.  I just had the sandwich because that is all I could hold.  No room for sides.  LOL. 

I am not a huge fan of tuna most of the time, but I tried a trick my friend showed me and it did well.  I mixed one can of chicken to two cans of tuna in order to cut some of the fishiness.  And it worked, and I really enjoyed it.  Very good protein source.

We had pinto beans cooked in the crockpot, buffalo chicken strips, fried hubby some potatoes and made some cornbread.
