Crockpot Chicken Burritos

Good Morning friends!!! We are having Crockpot Chicken Burritos tonight for dinner!! The heat index is to be betweeen 107 & 110 here today. So, it's crockpot cooking at my house! Hot dishes without a hot kitchen!!!

Chicken Burritos

3 - 4 b/s chicken breast
2 (7oz) cans of slasa verde
1 can refried beans
dash of salt
dash of onion powder
lf sour cream
cheese
tortilla shells

Spray crockpot with nons tick cooking spray. Mix salsa verde, refried beans, salt and onion powder in crockpot. Place chicken in pot, pressing into bean mixture, cover with foil, place lid on pot, cook on low all day or until tender. Shredd chicken with fork, mix well and serve on heated tortilla shells with sour cream and cheese.

Our supper tonight is a Pork Loin.  I bought one that says garlic and ONion.  I poured A-1 Jamecian Jerk marinade all over it wrapped it up in tin foil (frozen solid i might add lol) last night and put in oven on 350.  I cooked it for about 4 hours and then turned oven off.  Took out this am and put in frig.  Hoping it is done.  lol lol  Prob gonna have cheesy taters and some fresh peas and stewed squash with it.

Your cheesey taters sound yummy!! How do you make them? I was afraid my chicken would be charcoal by tonight..LOL. I used b/s strips instead of breast but it turned out really good.

Now these are REALLY hard so take a deep breath.  lol lol  I cut up a few taters just enough for me and dh and lunches the next day.  Boil until fork tender. Drain  I then layer taters, shredded cheese, ranch dressing, chopped onions and real bacon bits (usually the kind you buy in a bag).  Top off with cheese and bacon bits and bake until cheese is melted.  YUM YUM!!!

I also do another one where you boil the taters then drain then add can of cream of chicken soup, shredded cheese and crumbled up ritz crackers.  just mix all that together top with cheese and crumbled crackers and bake until warm through and through. 

BTW I ONLY use the B/S tenders.  Every since my surgery I have a really hard time eating chicken on a bone for some stupid reason.  lol

Ya'll are killing me.  I had to work late so we ate at Chili's.  But I have fresh squash for tomorrow.  LOL. So I get home cooking tomorrow.

Awwwww, Melissa.....we are sorry!  Yum, fresh squash! Our plants were looking really ad but it rained a good bit over the weekend so they are coming back out. Hope I have some by the end of the week, more maters too!!!
