It was great seeing everyone and meeting some new faces. Thanks Jane and Tommy for having all of us at your home. We really enjoyed it. Sugar Free Cream Cheese Pound Cake 1 - 8 oz reduced fat cream cheese 6 eggs 3 cups of Diabeti Sweet Sugar Substitute (can use less if like it less sweet) 3 sticks of light butter 1 tsp vanilla flavoring 3 cups cake flour (box kind) Soften and mix cream cheese and butter; stir in diabeti sweet. Add eggs one at a time and mix in. Add Vanilla. Blend until smooth. Stir in the cake flour and blend mixture. Grease and flour a bundt pan and pour batter into pan and bake at 300 degrees for about 1 1/2 hours. Start checking it after about an hour and 10 to 15 minutes as sugar free stuff doesn't take quite as long to bake as regular. I cooked mine 1 hour and 20 minutes. Insert a toothe pick, and if it comes out clean it is done. Redneck Caviar 2 16 oz cans black-eyed peas 2 to 3 green onions (I use 3) 1/2 Bell Pepper chopped fine (I used orange) 1 fresh jalapeno pepper, chopped fine 1 2 oz jar of diced pimento, drained 1 (8 oz) bottle of Zesty Italian Dressing (I just used Great Value Brand from Walmart) Drain and rinse the peas with cool water. Place them in a bowl and add remaining ingredients. Refrigerate at least 2 to 3 hours before serving. I usually make this up the night before and let it refrigerate overnight. Serve with scoop shaped corn chips or tortilla chips. I use the new baked scoops with mine. They are really good. Melissa

And let me just say it was all yummy! Thanks for the recipes Melissa! I really enjoyed finally meeting you in person. You are so georgeous and you have a beautiful personality to match. Jane - thank you and Tommy for putting together this bash at your house, you are both such a blessing. We had such a great time visiting with everyone. Precious DeAnna was as crazy as ever (you know I love ya girl!) Ms. Glenda it was so great to see you again, you are looking so great! Rhonda, you look absolutely marvelous... now get to work on our cruise! lol (P.S. please email the recipe for that awesome shrimp dip you made!) It was great meeting you too Marci. You are looking good, girlfriend. Your husband is just as nice as he can be. I enjoyed seeing and visiting with everyone. I wish more could have made it, but we will just have to have another bash sometime soon. Can't wait to see the photos. Melissa

I will work on that soon, I promise. I need to find out how many people would be interested in going so that I can get a group rate discount. I think I have to reserve 8 rooms to get the group rate. I will call one day this week and find out when the cheapest time of year would be to go, between March - September of next year. It was great seeing you. Thank you so much Melissa... The pound cake was so yummy.. I really enjoyed seeing everyone also. I always love to go to these events, I love to talk about our challenges and share our stories, and most of all just spending time with all of you is so wonderful. I have made so many wonderful friends on OH, and hope to meet a whole bunch more!! Jane and Tommy, thanks again for the hospitality, we really enjoyed our day with you guys. I hope to see you all again soon! Here are my recipes: Shrimp Dip 2 pkgs Starkist Shrimp (in pouch like Tuna) 1- 8 oz container of Sour Cream 1 pkg Ranch Dip Mix 4-6 oz of HOT Pace Salsa Mix the Sour cream and Ranch dip together, add salsa and shrimp. Be sure to drain juice off of the shrimp. I am sure that you could use fresh boiled shrimp if you can't find the pouches. I have had a hard time finding them lately. Serve with Scoops or Tostito chips, whatever you prefer. SQUASH DRESSING 2 CUPS COOKED SQUASH (I have made it with Zuchinni but usually use Yellow) 1- Lg ONION 1 STICK MARGARINE (I DON'T USE BUT 1/2 STICK) 3 CUPS CRUMBLED CORNBREAD (I use Jiffy Mix) 1 CAN CREAM OF CHICKEN SOUP ONIONS CELERY ( I leave this out, don't like celery) SALT PEPPER 2 EGGS I use fresh Squash, wash good and cut up however you want, I boil it in a little bit of water with my onions until it turns to mu****hen put it in my food processor (mini chopper). I add this to my corn bread, soup, and chopped up boiled eggs, mix well and pour into greased baking dish. Salt and Pepper to taste. Bake at 350 for about 30 minutes or until your desired consistency. ENJOY.. Rhonda

It was sooooo good to see you and Brandon (and girlfriend) today!!!! I just love you, you know. Shrimp dip was delicious, and I already know I like squash dressing and this is the recipe I use too, but I just saute the onions, and cook the squash until fork tender and do not put it in the food processor (we like the chunks) - sometimes I use 3 cups of cooked squash and 3 eggs...okay, now I'm just rambling. I want some more shrimp dip right now!!! DeAnna

Ditto - I was so excited to see everybody today - hardly slept last night - and it was just wonderful - Can't wait to make the caviar (will be making for potluck tomorrow night).
