Wonderful Protein packed receipe!

This is called Hot Mommas! I am going to type the true receipe and then I will tell you what I did a little different. 1lb grated cheddar cheese 1 lb grated monteray jack cheese 2 eggs 4 oz's of chopped jalepenos 12 oz can evaporated milk 1/2 cup flour spray a 9x13 casserole dish and put the cheese and jalepenos in the bottom. Beat the eggs and add milk and flour until well blended. Pour over top. Bake at 350 degrees for about 40 min. Okay so here is what I did. I did not have ev. milk so I used 6 oz's of skim milk and I also did not have to bake as long I think it was about 30 min for mine. I also did not feel like 2 eggs was enough cause I was feeding myself and two grown men so I used 4 med eggs and it turned out just right. Ya'll this is one of the best tasting things I have had in a while and so easy! You could also add bacon bits, sasuage, or ham chunks it is just easy easy easy to make it your own. Hope you all enjoy! oh yeah I used the 4 oz's of jalepenos and i thought it was wonderful my dh thought i should have cut back just a tad. but that did not keep him from having three helpings hee hee Denise

I forgot to suggest that next time I make this I think I am going to use Whipping Cream instead of milk and also leave the flour out that should cut the fat or sugar even more. Although you really are not using that much flour at all. Denise

Hey, girl. How are you doing? I haven't talked to you in ages it seems. I am going to try and make it to support group on Monday night. I missed the last one. I love my new job. I have a completely different personality since leaving my other job. I am so less stressed and more able to really enjoy my life and my family more. I am back to my regular exercise routine which makes me feel even better. It had gotten to the point where I had no time to squeeze exercise in, but that has all changed now. Thank goodness. I miss Christine. She is doing well though and seems to love Texas. So, that is good. I would love to get together for a visit. Let's do lunch really soon, okay? I work off of 28th Avenue now. Hey girl, It has been a long time! I am soooooooooo very happy for you. You deserve to be happy with your job and to finally have a life. hee hee I am sure you do miss Christine the two of you were always where the other one was. I am sure ya'll are still just as close just a little further away. lol lol I would LOVE to do lunch one day and catch up! To be totally honest dont think I will be making any more support group meetings. I just dont feel like I get anything out of them. No I am not depressed my life is soooooooo wonderful right now things could not be going more my and Wally's way right now! Hell this prob isnt the right place to tell you this but might as well no one else will prob read or even understand but to be perfectly honest with you I felt like that weekend us girls had the retreat we got so very close. I was truly truly going to put my best foot foward and turn my life around and be the best person to myself and to others that I could! I went to grave extents to pick out special little cards for each and every one of you to let you know just how much that weekend meant to me and to be perfectally honest heard from no one. OUCH that hurt a little. Please dont think I am talking about you cause you and Linda were the ONLY two I heard from. Just is a little hurtful when you try and reach out only to get your hand bitten you know. I know others have alot going on in their lives but hell how hard is it just to send a little email or something. I mean dont get me wrong I was not raised to give something only to expect something back but I guess in a way I did expect at least a "thank you" know and" I appreaciate you thinking of me" you know. I know guess I am just whinning. hee hee I am totally over it! Truly not a big deal and to tell you the truth at this very point in my life right now NO ONE can bring me down! Email or call me girl and lets do get together and do lunch that sounds great. I love and miss ya lots! Denise

The support group meetings are really geared towards those who are pre-op and early post op. I don't really get alot out of them anymore myself. I don't go to all of them, but I do try to make to one every now and then to answer questions and see if I can help someone else out. I depended on people farther out whenever I was new. But I really do wish we had a group meeting for those of us who are farther out. It wouldn't even have to be every month. Just every couple of months just to allow us to get together and discuss any issues or concerns we may be having and get input from others who are in the same place as us. I have really been doing well since that session we did that weekend. I started seeing a therapist one on one to continue what we started that weekend. I feel I resolved many of my issues and am now moving forward with my life. I, like you, couldn't be happier with my life and family right now. John and I are closer than we have ever been because I have been able to open up and let that wall down thanks to Mary and Cathy. Things are really going great. A wonderful new job and a wonderfully happy new me. I am so glad to hear you are doing so well. But I really miss you and want to get together soon. I think of you very often. And I really did appreciate the card you sent. It meant alot to me. You are a very thoughtful and wonderful person, Denise. And don't you ever forget it. Love ya, Melissa

Well... it does have eggs in it so i guess you could say breakfast although we all breakfast for supper all the time. you can pretty much serve what ever you want with it we had ham and toast. denise

Guess cause I'm hungry and was thinking about your recipe, I was thinking you could give it a "southwestern" flair with maybe some sauted onions and peppers stirred into the eggs or the cheese, or a jar of pimento and the sauted onions (I chop, put in a pat of butter and soften in the microwave covered for 5-8 min)......hummm.....D.
