SF muffin recipe

Hey all - came up with this ALL BY MYSELF!! and turned out very very good. Just trying to come up with different things for the kids to eat - SF Banana muffins (Splenda) 1 cup self-rising flour 1 cup oatmeal (I used quick cooking oats) 1 teaspoon baking powder (or little over 1/2 tsp baking soda) 1 cup splenda 1 egg 3/4 cup milk - plus 2 tablespoons (1/8 cup) 1 teaspoon vanilla flavoring 1 cup of mashed banana (good heaping cup is best) 1/2 teaspoon cinnamon (optional - my kids don't like but I do) 1. Preheat oven to 375. 2. Stir together first 4 ingredients in mixing bowl. 3. Add egg, milk and vanilla and stir well. 4. Fold in banana and cinnamon. 5. Spray muffin pan with PAM or other cooking spray, or use cupcake cups. 6. Fill each cup 3/4 full - and coo****il slightly brown on top. Makes about 16 muffins (This is actually half of a recipe I have that makes tons). They did turn out wonderfully.... DeAnna

mmmmmmmmmmmmmmmmmmmmmm......muffins......going to sam's today to buy bananas! Sounds like I will be cooking this tonight or tomorrow! I may add a few nuts to it. I LOVE banana muffins/bread/anything!!!! thanks! smoochies Arlies

Yep, nuts would be good, my kids just don't eat them very well...The actual recipe calls for about 1/4 cup butter, but I accidentally left that out and they could not tell the difference, sometimes I put a pat or two of real butter in just because I have it and real butter does have some healthy stuff in it...Guess it is still very moist because of the heaping cup of banana - lots of love - DeAnna.
