Getting to Know you for Friday!!!!
Ok.... This is what Mamaw told me.
Of course she knows it by memory- must be nice to be a cook book
*3 cups cooked & mashed sweet taters-
get all the strings out that you can.
*1/4 cup butter-
try to get the lowest fat content that you can.
*About 1 1/4 cups Splenda-
Taste it after adding 1 cup, if it needs the rest add it.
*2 large eggs
*1/4 cup evaporated milk
*1 teaspoon nutmeg-
Fresh grated is better & usually do more nutmeg than cinnamon
Depends on which one you like the best.
*1 1/2 teaspoons cinnamon
*1 unbaked pastry shell, 9-inch
MIX:
Taters & butter in a large mixing bowl while the taters are hot & mix well.
Mix in Splenda & eggs. *Remember to only use 1 cup of Splenda at first.
Blend with mixer on low speed until smooth. *Remember to remove strings.
Once smooth add milk & spices.
Taste to see if remainder of Splenda is needed.
If it is needed add it & mix it in really good.
Once everything is added in & mixed up good pour into the pie shell.
Bake at 350° for 45 to 50 minutes, or until firm.

She said that you are very Welcome !!!
Also, she said the next time I am at her apartment to get a copy of her fruit salad recipe for you. Its great !!! It has red & green grapes, raisens, apples, oranges, walnuts & pecans in it. I think that is all the fruit in it. She cooks a thin pudding type mixture that you mix it all up in. It is wonderful. So I'll get it asap.
I loves my Mamaw !!! She is an Angel. Always a kind word for everyone. Never meets a stranger. And would bend over backwards for anyone.

1. I am Wednesdays child.
2. My mom sang "Hush Little Baby, Don't Say a Word" to me and I sang it to my children.
3. Don't know what my first word was. My son's first word was brush. I know that is strange, but my mom owned a hair salon and he was in there all the time. So brush was an appropriate first word for him. Catherine's first words were Mama and Bye-Bye.
4. My favorite pie has always been apple pie with icecream. And I still eat it only in the sugar free version.
Happy Friday to you!
I get my stitches out today. Woo hoo.
