A LITTLE SUMIN' TO SWEETEN YOUR LIFE....
Sissie found this recipe and passed it on to me today. I haven't tried it, but it sounds good, and it looks like my next banana pudding will be made with it!!!!
PUDDING
1 1/4 cups milk
1 egg yolk
1 tsp vanilla (you could use other flavors)
1 1/2 TBSO cornstarch
10 packets equal
Bring 1 cup of the milk to a boil....
and while it is coming to a boil....
Mix egg yolk and 1/4 cup milk with the cornstarch.
When the milk boils, take it off the eye and add the egg yolk-milk-cornstarch mixture...IT WILL NOT LUMP AND THE BOILING MILK COOKS THE EGG YOLK AND IT WILL THICKEN IMMEDIATELY.
Add the vanilla.
Let cool about 10 minutes and add the equal!

Yeah, when I was a young-un my mom always made homemade banana puddin for church lunches - I would stand there stirrin' the stuff for what seemed like an hour. I remember it well....heavy pot, wooden spoon, milk, sugar, egg yolks (the whites were for the topping), lots of trouble, but OOHHH SOOO good. I've only done it a few times myself, but worth the trouble....D.
I am going to try this. My Mom makes the best custard in the world, the same one for pudding as for ice cream (homemade) I can never get mine smooth and creamy like hers for the life of me, but I can bake a pretty good pecan pie. I will try to make it with SF syrup and see how it turns out, if good will post it>>>>
