chicken gumbo

okay Arlies the queen mine does not have seafood. Only if you want to add it. I do add sausage and shrimp sometimes but mostly use chicken. Boil 4 or five chicken breasts with fat and skin on. Also 3 or 4 boneless breasts for chicken to choppedup. remove meat from broth and chop up into a little bigger than bite size pieces. Use 3 cups of broth for gumbo. Okay this is a really big pot of gumbo. add 4 glasses of water to begin with and salt and pepper. 1/2 bag of cut okra one large can whole tomatoes--mashed up with hands one chopped onion and bell pepper Put all this together and simmer for one or two hours--also the key ingredient in mine is the liquid cab boil. I add maybe 2 or 3 capfuls at least to mine before simmering. If you add sausage--boil the meat in a little water to get some of the grease out. This is so not fat free guys. It is delish though. Oh I do brown some flour in a little oil and make a roux too. Just do it like gravy but a little thicker and brown it VERY slowly. For added flavor a friend adds an envelope of onion soup mix to her roux and that adds alot to the gumbo. This is so scattered. Just ask questions and I may can answer them. YUM!!!! I will try to slip this in on JIm, but he is not an okra eater either....dern yankee!!! I don't know how far Magee is or even where Sanford is!! But have directions, will travel!!!! I'd be glad to come meet you! Lemme know! Smoochies Arlies
