Here's My addition-
Holiday Carrot Casserole--------------------------------------
This is a yummy Holiday Treat that tastes like the
Good Ole Sweet Potato Casserole,
(The kind with the marshmallows on top?)
But more healthy and Much Lower in Carbs.
Ingredients-
1 (2lb) Big bag of Bunny Luv ® Baby Carrots
(Could use any brand)
1 Can of cooked carrots
2 Granny Smith Apples finely Diced
1 Cup of No sugar added applesauce
½ Cup of Diabetic Sugar free brown sugar
¼ Cup of Splenda
1 cup Orange Juice
1 Cup Water
½ Cup of Chopped Pecans
1 egg
3 Tablespoons of SMART BALANCE Omega Plus Spread®
½ to ¾ Teaspoon of Butter Flavored Salt (Popcorn Salt)
1 Teaspoon of Corn Starch
2 Table spoons of Protein Powder (Flavorless or Vanilla)
½ Teaspoon of Vanilla Extract
½ Teaspoon of Pumpkin Pie Spice
½ Teaspoon Cinnamon (plus a pinch)
3 Tablespoons of SMART BALANCE Omega Plus Spread®
Pu****er, Orange Juice, Splenda and raw Carrots in large pot,
Bring to soft boil and reduce to barely a simmer.
Coo****il tender, approx. 30 to 40 minutes.
Sweetness will soak into Carrots.
In blender, place drained can of Carrots, Applesauce, Spices
Protein powder, Egg, Corn Starch, SF Brown Sugar,
2 tablespoons of the Smart Balance®, Salt and Vanilla.
Blend until smooth.
When Carrots are cooked, mix with Diced apple
And Blender mixture in large bowl.
Pour into large casserole dish that has been
"Greased" with remaining Tablespoon of Smart Balance®.
Sprinkle chopped pecans on top
With a sprinkle of cinnamon.
Cover with foil and bake on 325 for 15 minutes
Remove foil and bake an additional 10 minutes,
Until top starts to brown.
