1 lg pkg sugar free vanilla instant pudding 2 sm whipping cream (1 pt size) 40 pkts of Equal 2 tbsp vanilla flavoring Fruit (6 peaches) or whatever other fruit you want Milk In a mixing bowl, mix pudding, equal, whipping cream, and vanilla until pudding is mixed. Pour into ice cream freezer and fold in the sliced fruit. Add enough milk to fill the freezer to the fill line and stir well. Turn freezer on and wait. This ice cream is so fine. My neighbors did not even know it was sugar free until I told them. My husband even said it was better than the regular ice cream I used to make before surgery. My mom and I are going to experiment today and try using the sugar free chocolate pudding and sugar free chocolate syryp and crush some sf candy bars instead of fruit and see how that turns out. I will let you guys know. Melissa

I will be testament to that.... It is way better than any SF Ice Cream I have ever had and I didnt get that dumping feeling that I get with other SF Ice Creams... ALso, it is better than regular ice cream. It was very good. I will be making it too... hehe...

That would be good. Just cut them up into chunks and add them in and you have chocolate mint. That is a good idea. WE have our chocolate making right now. I will let ya'll know how it turns out. Melissa

That sounds good especially for us Mint Chocolate Chip lovers. I cant do this at home though with just my family. I would eat way too much. Its a good thing Melissa made my plate of food Saturday night and my dessert bowl or I would have eaten too much and been laid out on the floor. Food really is good cooked healthy... who would have thought! This week is grocery shopping week and I am not buying my family any junk food with the exception of my husband a Lemon Meringue pie. He is so skinny and that is his one pleasure. My daughter is going to have to learn to like squash, peas, beans, brocolli, etc... I am not cooking mashed potatoes, rice, or any other starchy foods anymore. Haha.. Its a temptation for me and its all around just not good for anyone. I am going to have the peanut butter/Sf Jelly Rollups on hand if she just cant do the veggies but at least they are healthy for her. She also loves boiled eggs and a little protein wont hurt any of us.... She could drink a whole 2 liter of coke in one day if I let her so I make my husband hide them and not drink them in front of her. She will do just fine with Light Hawaiian Punch or tea made with splenda (she doesnt know its splenda--woohooo and I plan on keeping it that way). Her problem is alot like mine in wanting to nibble in between meals and just graze. I just dont want her to end up like me. Has anyone of heard that we arent supposed to give kids diet drinks? Supposedly it does something to their stomachs. I had a friend tell me I couldnt give her diet cokes or diet sprites. I made my lunch for today since I cant leave on Mondays due to payroll. Plus this week is closeout for us - monthly and quarterly. I packed a grilled pork chop and an ear of corn. Having my shake now and this week is a whole new wonderful week. Cant wait til 2morrow to work out with Elesha and I may even go tonight before I pick up Emily. Rehearsals were cancelled for tonight so I dont have to rush. I know I will feel better. I am on one this morning... hehe... Better go get ready for work! Chow!

I take peanut butter and mix it with sugar free strawberry or grape jelly and spread it over a low carb tortilla. Then I just roll it up and cut it into little slices like a pinwheel. My kids love them. Arlies introduced them to these at the picnic. If I cook something they don't like I always have the stuff to make these. They get their protein and I usually serve them with a fruit and some lite chips and a glass of milk. Melissa

I borrowed my sister's ice cream maker. But I am going to buy one tomorrow. I am doing peaches next time. We just tried the chocolate. It is good, but I am not a big chocolate ice cream fan. I am more of a fruit person. The strawberry in the vanilla was wonderful, but I bet the peaches or maybe some crushed pineapple would be good too. We don't have to miss out on the homemade ice cream this summer. I am so glad I found this recipe. Let me know what all you try. Melissa
