BANANA BUTTERMILK POUND CAKE
This turned out not too bad for a make-it-up as you go recipe!!! Em and Jim LOVED it....I thought it was okay, but only ate a bite or two...They ate hunks!!!! (IT IS SUGAR FREE BUT NOT LOW CALORIE!!!!)
Banana Buttermilk Pound Cake
1 stick margarine
1 stick butter
2 1/2 cups Splenda
3 cups self-rising flour
2 cups buttermilk
2 teaspoons vanilla flavoring
1 tsp cinamon
3 extremely overripe bananas
6 eggs
Set all your ingredients out and let come to room temperature.
Beat Splenda, margarine, and butter until creamy.
Add vanilla and cinnamon.
Mix well.
Add all three bananas and beat well again.
Add eggs one at a time, beating after each.
Add flour and buttermilk, alternately.
Beat awhile longer.....My dear aunt of 87 years says the secret to pound cakes is to "BEAT THE HELL OUT OF THEM!"
Pam a tube cake pan and sprinkle flour in it. Pour in batter. Let rest about 5 minutes. Put in oven. Turn oven to 350 degrees (YES START IT IN A COLD OVEN) and bake for about 1 hour to 1 1/2 hours. Check with toothpick for doneness.....It will be a little packy due to the bananas, but the toothpick should come out clean.
