PICNIC RECIPES......
Jane gave me a good idea in her last post! Please post the recipes of the dishes you brought to the picnic below.....and any other recipes you are willing to share with us....
I think we should look into a WLS cookbook (like alot of the Church cookbooks). I will get some info on having it done and EACH and EVERYONE needs to come up with some recipes to put into this cookbook....A portion of the proceeds can go to OH and a portion can be set aside for the next BASH. Lemme know what you think about that and in the mean time, please post your picnic (and any others) recipes on this thread!

PEANUT BUTTER & JELLY LAVISHES
1. low-carb tortilla wraps
2. low-sugar/fat peanut butter (I used Simply Jif)
3. Sugar-free or all-fruit jelly or jam
On 1/2 of the tortilla wrap, spread a THIN layer of peanut butter. On the other half spread an even thinner layer of jelly/jam. Roll up beginning on the jelly/jam side. Wrap tightly in plastic wrap and refrigerate for at least 1 hour. Remove from refrigerator and slice into bite size pieces (or for the kids, leave them whole).
REGULAR LAVISHES
1. 1 block (8 ounces) fat-free cream cheese
2. 2 TBSPS chives
3. assortment of low-fat VERY THIN SLICED deli meats (chicken, turkey, ham, roast beef (if you dare), etc.
4. low-fat (or fat-free) cheese slices or blocks of cheese you slice yourself (I like using a whole stick of a string cheese sometimes....The ones at the picnic had Farmer's cheese and Kraft 2% American slices.)
5. low-carb tortilla wraps
6. thinly sliced onion
7. thinly sliced bell pepper
8. roasted red peppers (jar from the (Dollar General) $ store is $1 a piece and at Walmart they are $2 or $3)
9. lettuce
Let cream cheese soften and whip it with the chives.
Spread a thin layer of the cream cheese mixture on 1/2 of the tortilla.
At the edge of the cream cheese mixture (near center) place a line of onions, bell pepper, and roasted red pepper.
Cover line of veggies with lettuce
Place cheese on the plain side of the tortilla.
Top cheese with the deli meat of your choice.
Roll up from the meat side.
Wrap tightly in plastic wrap and refrigerate at least 1 hour.
Remove from the fridge and cut into bite size pieces - or leave whole for the hubby....(I send these in Jim's lunch fairly often....it's a great break from a sandwich.)
WATERMELON
1. Go to the fruit stand at Philadelphia.
2. Give the man $5 for each watermelon.
3. Night before the Picnic, place the water melons in a large cooler and cover with ice.
4. Go to the Picnic.
5. Give Jay the knife and let him cut them up!!!!
CHICKEN -N- DUMPLINGS
6 leg quarters
1 can Cream of Chicken Soup
1 quart No Fat Milk
Salt
Pepper
Minced Garlic (dry or wet)
Salt, Pepper, and Garlic the Water to taste. Boil Chicken till done (I boil it till it almost falls off the bone) debone chicken (after it cools).Do NOT drain the broth from the pot!
In a large bowl sift about 3 sifter fulls of flower (self rising) and make a hole in the middle. pour 1 8oz glass of water in the center in the hole. use your fingers to mix flower and water slowly, DO NOT fold all the flower into the batter, just rub your fingers togeather in the center till the water is gone (so in other words dont mix it like your making biscuts or a cake!) put some flower in another bowl and after the dough is stiff put in other bowl and make a ball and kneed for a few min. pinch off a softball size piece and roll out real thin on a flowered cookie sheet or table with a rolling pin. Cut into squares.
Bring broth to a rolling boil and slowly drop dumpling squares into the broth stiring slowly so they dont stick after you add all the dumplings you want stir in your chicken then put the can of Cream of Chicken soup in and stir it up. Then add your No Fat Milk. Reduce heat to low and let simmer till good and hot thruout. DONT STIR TO MUCH OR THE DUMPLINGS WILL CRUMBLE INTO PIECES AND YOU WILL HAVE SOUP AND NO DUMPLINGS.

PEANUT BUTTER COOKIES
1 cup low sugar peanut butter
1 and 1/3 cup Splenda
1 egg
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F.
Spray baking spray *like Pam or whatever* on a large baking sheet.
In a mixing bowl, combine the peanut butter, 1 cup Splenda, the egg, and vanilla, and stir well with a spoon.
Roll the dough into balls the size of walnuts.
Place the balls on the prepared baking sheet.
With a fork, dipped in Splenda to prevent sticking, press a crisscross design on each cookie. *peanut butter cookies without the crisscross just seems so wrong to me hehe*
Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining Splenda.
Cool slightly before removing from pan.
Eat and smile!

Ok, I didnt come to the picnic but do have some good recipes! My father who was a diabetic loved sweets and these pies were something he could have. 1 milk, 1 fruit and 1 bread exchange....
Banana Creme Pie
2 bananas
Sugar free Jello vanilla pudding mix
skim milk
graham cracker crust
or baked pie shell
cool whip free
In the bottom of the pie shell, slice one banana, then put a thin layer of pudding then the other banana sliced, and finish with pudding. Use cool whip free to top the pie and refrigerate.
Chocolate Creme pie can be made the same way with Sugar-Free Jello pudding mix, and skim milk, you can also use egg whites to make a merangue for the topping!
Banana Pudding can be made using sugar free cookies layered with SF pudding too. One portion equals one exchange of fruit, milk and bread on the diabetic diet......
This is one of my most famous receipes that I usually don't give out, so enjoy!!!!! It is sooo easy to make and a way to use those leftover crawfish from a boil, although you can buy just a little already boiled to make this dish!!!!!
Crawfish Quiche
1 cup of boiled, peeled crawfish tails (spicy are the best!)
1 cup of grated cheese
1 cup of skim evaporated milk
1 scant T. flour
3 eggs
Chopped green onion 2T or to taste
Chopped bell pepper 2 T.
black pepper
no salt as the crawfish are already salty.....
Unbaked deep dish pie shell
put the crawfish in the pie shell cover with chopped onion and bell pepper.
Add cheese and sprinkle evenly so that all is evenly distributed in the pie shell.
Whisk togather the eggs, flour, black pepper and if you want other seasonings add them into the mixture, add milk to egg mixture whisk well and then pour all into the pie shell over ingredients. If you have a bit of egg mix left over, you can bake it in another dish, or you could use pam and no shell if you are afraid to eat the shell.
Bake in a 350 degree oven, for about 45 minutes or until the knife comes out clean from the center!!! Serve hot with green salad for a great meal.
Note the unbaked quiche can be frozen for up to a month, so it is a great meal if you need something quick, just put it in the oven frozen and it will take a little longer but tastes just as good!!!!
You can also make these in tart shells, for small servings and just bake one at a time since you cannot each much since surgery!!!!
