Baked Catfish?
Next Wednesday will be 8 weeks postop so I can have fish. I was thinking of baking a catfish fillet and found a recipe on Food Network. The sauce it calls for to spoon over the fillets before baking involves butter, white wine lemon juice and chopped cilantro. And then calls for sprinkling paprika over the fish when done. Of course I'll use butter lite, but what do you think about the other ingredients. Anything I should be wary of.
