I had been missing chicken salad as one of my fav foods since I had WLS. I tried it once the traditional homemade way and it didn't work in my pouch. Here is how I made it for my lunch today. few strips of Louis Rich brand grill chicken cut tiny boiled egg white cut tiny LF mayo about 1TB FF sour cream 2TB pickle chopped fine (Mt. Olive brand w/SPLENDA) salt pepper Mix well and enjoy. I really like the Louis Rich chicken it is so moist!! You could make more for the family but today was my experiment that turned out yummy. I just made one serving.

Sounds good. I love real chicken salad but since surgery have been lazy about making it. I usually use a can of chicken, green grapes, mayo, and celery when making mine. I love it. Thanks for sharing your recipe. I will be sure to try that chicken.

I put my chicken in the food processor!!! That way if you "forget" to chew enough then it is already chewed up! I also put the onion in with the chicken and the onion juice makes it moister, but you must LOVE onion!!! Smoochies Arlies

Speaking of chicken salad.. I am real funny about mine.. Arlies, remember the meeting in Meridian I came too and that nurse brought chicken salad.. Will you please ask her next time you see her for the recipe -it was really really good and I would love to make some. She told me what all she had in it but then I slept and it was gone... Thanks!
