I am in desperate need of a sweet receipie. Really cake or pie. And not too hard. hee hee I promised my mom and dad I would bing a couple of sweets (sugar free) to Easter dinner. I can not find anything online to my liking or either it is way too long and drawn out. I have thought about using sugar free vanilla wafers and crush them for a pie crust and then use fat free choch pudding with low fat cool whip added to it as a filling but i want to be real creative and have something really good. lol lol Oh well I sure hope ya'll can help. Sugar Free Banana Pudding 1 8 oz cream cheese 1 small lite cool whip 1 box sugar free vanilla wafers 1 box sf f-free vanilla pudding 1 c. splenda 2 to 3 bananas (depends on how many you like) Mix softened cream cheese with 1 c. splenda until creamy. Add the container of cool whip and mix well. In separate bowl mix the pudding according to the pie filling instructions. Then add it to the cool whip cream cheese mixture and make sure it is mixed well. In a dish spread part of the mixture on bottom. Put a layer of bananas and vanilla wafers. Continue layering until you end up with a layer of the pudding on the top. Chill well before serving. Sugar Free Blueberry Pie 1 c. splenda (to make sweeter add 1/2 c. equal spoonful with the splenda) 1/3 c. flour 1 bag frozen blueberries 2 pie crusts (one for botton and one to lay over as top crust) 3/4 stick butter Mix the splenda and flour and pour over the blueberries and lightly stir it all in. Pour into the pie crust. Cut the butter into squares and place evenly over the berries. Put the second pie crust on top and press down the edges to close it. Cut off any excess. Put an X in center to vent. Bake at 425 deg for about 35 minutes. After about 20 minutes take it out and put foil around the edges so that they don't get too done. Then put back and continue baking. Hey girl thanks for the recipes. The banana pudding sounds to die for and that is my all time fav dessert. but my husband HATES bananas lol lol So that one is out but for sure will try the blueberry pie. What about any cake recipes got any? Can we have angel food cake. I have seen some recipes that called for the angel food cake mix. hmmmm got anything along that lines? Thanks Denise

I do have a yellow cake recipe that is sugar free. And then you frost it with a sf strawberry cream cheese icing. I have the recipe at home so I will try to post it tonight. The yellow cake makes two layers. I sometimes cut the layers in half to make four so that I have more frosting per piece. The frosting is easy: 1 8 oz cream cheese 1 c. splenda 1 container strawberry flavored cool whip Mix together well until creamy. Frost cake and refrigerate. You mentioned your hubby doesn't like bananas. Well you can take that same mixture and leave out the vanilla wafers and the bananas and layer splenda sweetened sliced strawberries instead with the mixture. I have also taken sf angel food cake I bought at Walmart and crumbled it up and done a layer of cake, layer of pudding mixture, layer of sf cherry pie filling and keep layering that way and top with cool whip. That is another variation using the same filling you make to use in the banana pudding. Well, gotta go. I will post the yellow cake recipe tonight. Love ya, Melissa

Do your chocolate pie thing, but put sliced bananas on the crust before you put the filling in! YUM!!!! Smooch Arlies

Yellow Cake Recipe as promised. 2-1/4 c. self-rising flour 1-1/4 c. splenda 1/2 c. equal spoonful (helps the splenda to sweeten better) 1 pkt of dream whip or sugar free vanilla pudding (either is fine) 2/3 c. shortening 1-1/4 c. milk 2 eggs 1 tsp vanilla extract 2 tsp butter flavoring Mix the flour, sugar, and dream whip or pudding. Then add all other ingredients and mix really well until smooth. Grease and flour 2 round cake pans. Pour into pans and bake in 350 degree preheated oven for about 30 minutes. You know cake is done when you stick a toothepick in the middle and it comes out clean. Hope you enjoy this. My kids love it. I make cupcakes all the time for them. They love the strawberry icing.
