I've not tried the Vanilla syrup but it sounds good. I use flavored syrups like Hazelnut, White Chocolate, Raspberry, etc to flavor my vanilla protein powder. I love coffee and the vanilla sounds like a good one for that too.
I'll have to get a recap on the Dr. Carson speech at our next lunch. I'm not sure what was said about food textures but I use oatmeal as a comfort food occasionally and find the texture soothing.
