Low Sugar or Sugar Free Tea Cake Cookies
There are two variations I use for this depending on tolerance of sugar.
Here is the recipe Elesha:
2 Cups Self-Rising Flour
2 Cups Splenda
2 Eggs
1/2 Cup Oil
1 Tsp Vanilla Flavoring
Mix All Ingredients Well. Roll into small balls and press down slightly onto greased cookie sheet. Bake at 350 Degrees for about 8 to 10 minutes. Check them after 8 minutes because cooking time will vary.
The cookies are fine like this just a little crumbly. When I take them somewhere like a party I will substitute one cup of the Splenda with 1 cup of Splenda Blend. They do much better this way and taste better. The little bit of sugar it adds doesn't bother me as long as I have had some protein with it or right before it. So it just depends on how you prefer to do it.
I had to experiment myself to finally get them good and tasty.

Thank you for the recipe. I have a diabetic husband who LOVES sweets! I will print and save to make him some. He will get the full splenda version!
Nobody told me this would happen - things made with sugar smell "off" to me now. (It's not a good smell!) I dunno if splenda-made stuff will be the same way or not.

Good mantra! You may want to add to I wiill dump from sugar...so I won't even try it for a year!
Some of the most successful WLS people I know totally banished sugar and didn't even know how many grams made them dump until at or near goal. It is an addictive little snake and it will bite if you are an addict like me. A little only makes me want more.
