had to repost this one can't wait to try it.
Pumpkin Pie Pudding
1-3/4 cup cold milk
1 package fat free, sugar free vanilla or cheesecake pudding
1/2 cup of canned pumpkin (use fresh only if you are allowed solids)
1/4 to 1/2 teaspoon pumkin pie spice (or cinnamon/nutmeg...)
1 cup lite whipped cream
Mix first 4 ingredients and let stand for two minutes. Then fold in whipped
cream. It is suggested to sprinkle gingersnap cookie crumbs on top, but
that's optional.
I spooned single servings into little juice glasses and covered them with plastic wrap. They were a hit with my other WLS friends. I decided to make the pudding and pour it into a graham craker crumb pie shell. I took it to my Mom's for Thanksgiving last year and it was a hit there too.
Take care and enjoy! Kristen
MMMM!! Deviled eggs! I have a carton of eggs that's about to expire...and that's exactly what I'm doing with them. Thanks for the inspiration!
I NEVER thought of putting ham in them. We happen to have the deli shaved/ thin sliced ham in the fridge too! YIPPEE!
MMM, that may jsut be my dinner...oh wait, I have a huge pot of Chicken and dumplings with my name on it too! The eggs will be for dessert!
I'm also going to make a batch for thanksgiving dinner. We are all trying to think of things to bring and we ran out of ideas after turkey, stuffing, rolls, mashed taters, green bean casserole, sweeet potato casserole, and lots of deserts. Nobody likes cranberrys except for me, so that's out. Weirdos!
Now I can wow them with my eggs! I'll bring that as a surprise. MMM! Dang I'm so hungry now!
Thanks for the recipe! Kristen
How about cooking the turkey upside down and in a baking bag? A girlfriend was telling me that she does that everyyear and the turkey turns out super tender. I'm hoping my sis in law will try that this year. If not, no biggie, atleast I'M not in charge of the turkey!!! What a hassle! I'd rather be in charge of EVERYTHING ELSE if someone else'll do the turkey!
