I knew that with the help of my girlfirends back at the Ca MB I'd get the recipe sooner or later! Last year while I was at my one year post op appt I found a recipe in a magazine that sounded so good. I adjusted it to make it nearly sugar free for post ops. It's super easy and requires NO COOKING! YAY! Pumpkin Pie Pudding 1-3/4 cup cold milk 1 package fat free, sugar free vanilla or cheesecake pudding 1/2 cup of canned pumpkin (use fresh only if you are allowed solids) 1/4 to 1/2 teaspoon pumkin pie spice (or cinnamon/nutmeg...) 1 cup lite whipped cream Mix first 4 ingredients and let stand for two minutes. Then fold in whipped cream. It is suggested to sprinkle gingersnap cookie crumbs on top, but that's optional. I spooned single servings into little juice glasses and covered them with plastic wrap. They were a hit with my other WLS friends. I decided to make the pudding and pour it into a graham craker crumb pie shell. I took it to my Mom's for Thanksgiving last year and it was a hit there too. Take care and enjoy! Kristen

It is really yummy. It was great in California, where the weather is actually just barely cool around this time of year, so eating a cold pudding is fine. Out here, I think I'm too cold to eat pudding! But I'll just crank up the heater and deal with it! LOL!! Take care, Kristen
