No Bake Chocolate Protein Cookies
1 cup Splenda
1/3 cup almond milk (regular milk is fine)
2 T. butter
1 1/2 T. cocoa powder
Pinch of salt
1 1/2 scoops chocolate protein powder
1/4 cup peanut butter
1/2 t. vanilla extract
1 1/2 cups quick oats
In large saucepan, over medium heat, add Splenda, milk, butter, cocoa and salt. Bring to a boil and allow to boil for one minute, stirring frequently.
Remove from heat and whisk in peanut butter, protein powfder and vanilla; mix well. Stir in oats.
Gently roll into golf-ball sizes and drop onto waxed paper. Allow to set up for 15 minutes. Coat with additional cocoa, finely chopped nuts or le4ave plain. Store in airtight container. Makes 16 cookies.
I used a cookie scooper which doesn't get my use since WLS.
Per cookie: 101 calories; 7 g protein; 2.6 g fat; 8 net carbs; 1.75 g sugar; 33.25 mg sodium
The protein powder used is 110 calories and 20 grams of protein per scoop.
