Fiesta Beans
This is good as a side dish but would also be good as a dip or a filling in a flour tortilla.
1 16-oz. can FF refried beans
1 15-oz. can pinto or navy beans, rinsed
1/2 cup salsa or picante sauce
2/3 cup shredded Cheddar cheese, divided
4 scallions, sliced or use onions
combine refried beans, pinto beans, salsa and 1/3 cup cheese in a saucepan. Cook over medium heat, stirring, untilo mixture is hot the cheese is melted. Spoon bean mixture into a 2-qt. baking dish and sprinkle remaining 1/3 cup cheese and scallionsover the top.
Broil until the cheese is lightly browned, about 2 minutes.
Serves 6, 1/2 cup each

NOTE: I mixed all ingredients together and cooked on top of the stove.
