Fruit Crisp

This is so easy to fix and delicious.  I used 6 cups of unsweetened mixed berries and added 1/4 cup Splenda.

2 cans (15 oz.) peach slices, in juice or water, drained
2 cups Rice Chex, crushed
1/3 cup brown sugar (could use Splenda)
1/4 cup flour
3 T. cold butter

Place fruit in greased 8" square baking dish.  In small bowl, combine the cereal, brown sugar and flour; cut in butter until mixture resembles crumbs.  Sprinkle over peaches. 

Bake at 375 degrees for 15-20 minutes or until topping is golden brown.  Serve warm.

Next time I'm going to use Carbquik instead of flour.  I know the cereal has carbs but there's not a lot when you divide it over 6 servings.

Hubby had ice cream on his.  I don't eat ice cream at all so I had some whipped cream.

Thanks for posting this Jo it really sounds good. Can you tell I am fighting the 'before bedtime snack gremlins'?
I wonder if the flour could be replaced with ground almonds? That would give it another level of flavor and be much healthier. I might try it when I remember to buy the fruit.

I just have to have something to eat in the evening.  My husband always has a snack about 9 pm and I try to tell myself I don't need it but I always have something healthy.  I do plan my food for the day and save something for evening so I don't feel I'm overeating.

Yes, you could use almond flour or soy flour.  I have some Carbquik I'm going to use next time.  The cereal is divided over 6 servings so you aren't getting a lot in a serving.  Oatmeal could be used too.

At Christmas I made Party Mix and had Chex cereal left over so I'm trying to use it up.  It's not a cereal I would ever eat in a bowl with milk.  I like cereal but because of the carbs, don't eat it very often.
