Homemade High Fiber Granola

This was on Good Morning America last week, I made it this week and it turned out really good.  Susan puts it in her yogurt with protein powder and loves it, makes for a variation of getting your protein in.  Enjoy!

High-Fiber Granola

Ingredients

·  Raw oats

·  Ground flaxseed

·  Ground wheat bran

·  Unsweetened coconut (optional)

·  Raw pumpkin, sunflower and sesame seeds

·  Almonds, pecans or walnuts, slivered or sliced

·  1/2 cups of canola oil,

·  1/2 cup of natural peanut butter,

·  splash of water,

·  1/4 cup of honey and

·  1 TBSP cinnamon

·  Dried fruit (cherries, raisins, figs and/or blueberries)

 

Preheat the oven to 325 degrees F.

Spread raw oats into one or two baking sheets/roasting pans with sides. I make extra to freeze in zip lock bags. I never measure but suggest you use enough oats to generously cover the bottom of the pan. Add plenty of flax seed, wheat bran, seeds, nuts and coconut if desired. I never measure the amount and therefore use whatever I like best and have available.

Mix together canola oil, peanut butter, water, honey and cinnamon in a 2-cup glass measuring cup and heat at 50 percent power in the microwave for approximately two minutes (the peanut butter stays pretty lumpy). You can also heat the mixture slowly in a pan.

Stir into dry ingredients.

Bake at 325 for 20-30 minutes or so, stirring once or twice. Remove when "toasted" to a nice light brown color. On occasion I turn up the temperature to 350 degrees to toast more quickly.

When granola is baked and cooled, add some of your favorite dried fruit such as dried cherries, raisins, figs and blueberries!

This granola is a great gift for family and friends. Cool well before placing in freezer bags and storing in the freezer.

Thanks for posting this recipe.  It sounds GREAT and I usually don't care for Granola.  However, I am definitely going to try this.  I have a question...

So you actually spread the Oats onto the baking pans then mix "wet" ingredients in a bowl then stir into into the dry ingredients while still in the pan?  Or do you add the oats into the bowl with the "wet" ingredients??  My brain is a little foggy this morning....but then again that isn't anything unusual!

Hey Deb,

Is what I did was spread all the dry ingrediants onto the cookie sheet, I realized it was to much to mix up with the wet ingrediants so once I mixed up the wet and cooked it in the microwave I put all the dry into a big mixing bowl and mixed all the wet and dry together like that, it made it so much easier, I actually doubled the recipe so I'd have enough for awhile, geeze it made enough for the rest of the year lol,  I let it cool completely and put it in quart size baggies and into the freezer.  Hope that helps ya.

I'm going to Walmart tonight and buy the ingredients needed to make this granola.  I'm not a big granola fan but this sounds good!  Thanks for sharing the recipe and answering my question.

Do you have the nutritional information for the Granola?  I made some tonight, one "plain batch" and one with just a few milk chocolate chips.  I also added a little vanilla and just a little bit of brown sugar splendia and cranraisins.  I like it.  Jake doesn't.  David is asleep so he hasn't tried it.

Please post the nutritional information and what the serving size should be if you have it.

Thanks so much for posting it.  I think it would be good as a granola cereal.  I just may try that in the morning.

Hey Deb,

I went to the website I got the recipe from and they did not post the nutritional values of the recipe, it did have that one recipe is over 8 servings.  Tomorrow I'll try to run it through a nutritional calculator and i'll post that when I get it.

Today I ate a bit of the granola like cereal and it was really good.  I added a scoop of protein to some skim milk then poured it over the granola.  That recipe is really good cuz you can add different things and change it up, soooo great.
