It was me, here you go.....

The Hambuger Jerky Recipe
5 lbs 90% lean ground beef (90-92%)
4 1/2 teaspoons non-iodized salt
2 1/4 teaspoons Accent seasoning
3/4 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
2 1/4 tablespoons meat tenderizer
3/4 tablespoon pepper
3 tablespoons brown sugar
1/2 cup worcestershire sauce
1/2 cup liquid smoke
1/3 cup ketchup

Mix all spices with ground beef EXCEPT Worcestershire, liquid smoke and ketchup.
You need to really get your hands in to mix it well.
Press into strips with a jerky gun.
Mix Worcestershire, liquid smoke and ketchup in a shallow dish.
Coat strips with sauce.
Place on trays to dry.
Dry according to your dehydrator manufacturers instructions. (I usually followed the above oven method it is faster.)

Other flavors as follows:
Hot and spicy - mix Louisiana hot sauce with water to thin a bit. Coat strips and dehydrate.

BBQ - thin your favorite bottled bbq sauce with water. Coat strips and dehydrate.

Teriyaki - thin bottled teriyaki sauce with soya sauce. Coat strips and dehydrate.

Enjoy,
Connie

This sounds so good but I don't have a dehydrator.  Can it be done in the oven?

Yes, Jo it can and I usually use the oven instead of my dehydrator cause it is faster makes less of a mess. I lay them out on my cookie cooling rack sprayed with Pam sitting on top of a jelly roll pan. Then set the oven at the lowest temperature. (150-175°F).
Bake six hours, turning after three hours
Jerky is done when meat is dried out, depending on your oven. You are good enough cook to know by sight if they are done or not. And they are so worth the wait!
Now I have a question for you please. You had mentioned a while back that you sew baby burial clothes for charity. Could you direct me to where I can learn more about this or would you share with me how you do it and where you find the patterns? I used to own a flower shop and would never charge the families for the flowers they ordered that had to bury a baby. Even though it seemed the cold hearted local funeral director had no problem charging them ridiculous prices for such a tiny little angel. And he seemed to feel the need to tell me how stupid I was to not be charging the parents. I would always just look him in the eye and say that's OK I bet I sleep better at night than you do! Anyway I digress here. But if you wouldn't mind I would certainly like to know more about this project.
Thanks,
Connie B.

I'm so glad the jerky can be one in the oven.  I don't need another kitchen gadget.

Newbornsinneed.org is the organization that collects burial garments.  I'm sure I got patterns from their website, but I'm not seeing any now.  You can probably google infant burial garments.  If can't find the patterns, I can send to you.  They are such tiny little garments.

What a sweet thing for you to do in not charging for flowers for a baby's funeral.  I'm sure you have been rewarded for that kind jesture.

Connie-

What is a jerky gun?  Can you make it without the gun?  How thick/wide should your strips be?

Sounds delicious.  Thanks for your help.

Julie here is a website that has them but I found mine at a farm supply kind of place.

It's kinda like a cookie press on steroids.

I would think you could place the raw meat between sheets of plastic wrap and roll it out thin and cut it in strips that way. I have never tried as I have a gun, but I would think it would work. If you try it let us know how it came out please. As these guns are not real easy to find locally. Yes, it is very good and much cheaper than using prime cuts of meat. Also I have friends that use deer meat with this method.
