WHATS HAPPENING MONDAY

ok now where is everyone.....im sorry i was so sick all day yesterday that i just couldnt get on but hopefully i feel better so far this morning...yesterday my leg and knee felt like they were or fire and was swelling again. i kept the ice on it all day yesterday even when i was doing my exercises on the machine. and kept it on it all night last night too....it looks and feels a little better this morning.
so did you or your hubby get a deer...no such luck here . that is some of the best meat there is as far as protein content goes. now that it is raining and all the week end hunters or rather drinkers are gone maybe the deer will start coming out again now. and Joe can get one. 

Hope everyone is doing ok .....since no one posted for yesterday , dont have a lot more to say. i dont have very interesting days right now. 

Im waiting for the P.T to get here and  then at one this afternoon i get the staples taken out   OUCH!!!!! maybe it will stop swelling then i sure hope so.

Good Morning Mimi and Mo...

Setting down to take break already this morning... have worked up a bushel of apples... have apples cooking down for sauce and butter... used the handy dandy apple peeler Paul fixed up. Have also gotten one of the room darkener's done and the seams turned on the other one... I have been trying to get that simple job done for months! I'm bad... it's just actually setting down and doing it...it is so gloomy here and a good day to do such things.

I have been cracking a few black walnuts too but they seem to find their way into my mouth! ~tee hee I need several cups for various recipes coming up for the holidays.  I guess I will have to show some restraint and actually put them in the cup! ~ha  My nut cracker is working well and I have to do very little serious picking in them.  Well worth the $$ I paid for it. That hammer business is for the birds!

I did the training for my new job at Penney's for the holidays...will be interesting to see how well I do on my feet for hours at a time?  I'm kind of looking forward to it.

I looked yesterday for a jerky gun for Paul for Christmas but they were out of coarse... will maybe look in the city? Any one have any suggestions as to the "best" one?

Can you believe I got cream cheese yesterday for 49 cents !!! It takes so little to excite me! ~tee hee I bought 20 of them... enough to last thru Easter for sure! ~ha It takes 4 to make a cheese cake in some recipes.

Paul is getting ready to start building a barn.  I can see his mind working... figuring and planning etc.  I get a chuckle out of how he works... when he's on a mission  he's pretty worthless for anything else...~ha

Well better get on to the exercise  this morning...think I will use my gazelle since it's raining.

I bought a jerky gun at Feldman's Farm and Home store in Liberty Mo. a couple of years ago. Don't know if it is a chain store or not. The phone number is 816-792-3348. Might give them a call, they might ship one to you if they are locally owned and still carry them.

Oh Connie thank you so much... we do not have Feldman's but do have an Orcheln's... will check with my nephew and see if they carry them.  Do you make much jerky? If so what seasonings do you use?

Glad to hopefully be of help Bec. I used to make alot of jerky and send it to several US Troops in Iraq. But since those guys got back home I haven't made as much. With the price of beef it got a little costly of course. But they enjoyed it so I couldn't help but send it. I am too soft hearted for my own good at times. tee hee
Here are 2 recipes I used faithfully, but I cook more by sight than measure so they are both pretty forgiving. The hambuger one didn't ship as well as the flank steak one did. But you won't have that concern with yours.

The Best Jerky I Found
4 lbs flank steak or deer steak
2 teaspoons black pepper
2 teaspoons chili powder
2 teaspoons garlic powder
2 teaspoons cayenne pepper, more if you like it hot
2 teaspoons onion powder
1 teaspoon liquid smoke
1/4 cup soy sauce
1/2 cup Worcestershire sauce
1/2 cup Frank's red hot sauce

Trim all fat off meat.
Cut steak in to 4 inch strips.
The steak should be about 1/2 inch thick. It's easier to cut meat partially frozen.
Pound meat lightly, you don't want it too thin.
Add all ingredients in a large bowl. Mix well.
Cover and refrigerate overnight (8 hrs).
Line cookie sheets with tin foil.
Place steak strips on sheets, don't overlap meat
Set oven at lowest temperature. (150-175°F).
Bake six hours, turning after three hours
Jerky is done when meat is dried out, depending on your oven.
Worth the wait!

The Hambuger Jerky Recipe
5 lbs 90% lean ground beef (90-92%)
4 1/2 teaspoons non-iodized salt
2 1/4 teaspoons Accent seasoning
3/4 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
2 1/4 tablespoons meat tenderizer
3/4 tablespoon pepper
3 tablespoons brown sugar
1/2 cup worcestershire sauce
1/2 cup liquid smoke
1/3 cup ketchup

Mix all spices with ground beef EXCEPT Worcestershire, liquid smoke and ketchup.
You need to really get your hands in to mix it well.
Press into strips with a jerky gun.
Mix Worcestershire, liquid smoke and ketchup in a shallow dish.
Coat strips with sauce.
Place on trays to dry.
Dry according to your dehydrator manufacturers instructions. (I usually followed the above oven method it is faster.)

Other flavors as follows:
Hot and spicy - mix Louisiana hot sauce with water to thin a bit. Coat strips and dehydrate.

BBQ - thin your favorite bottled bbq sauce with water. Coat strips and dehydrate.

Teriyaki - thin bottled teriyaki sauce with soya sauce. Coat strips and dehydrate.

Thank you so so much for taking the time to write all that out!  I appreciate that just incredibly!  I will for be trying those for sure!

How wonderful you did that for the military men!  I know you must of been incredibly blessed for that!

I'm off today to stop at our farm store and see if I can find one...it's for a christmas present but I will have all the stuff on hand to get right busy on it... it is such good protien for us as well as my husband eating it like candy!  And with this type of seasonings it will be much cheaper than buying the pre packaged stuff. Gee Connie thank's bunches!

Good morning OH,

Jan I'm sorry to hear you were sick all week-end, but just want to let you know you weren't alone. Got some kind of lower GI bug and spent my week-end on the throne. Feeling better today, but didn't have the energy to even turn on the computer.

My older son got a doe, and you are right about venison being the best meat. We always had venison and I used to cook stews, chili, roasts and you name it. I can remember when we came out here in 1979, learning how to cook chili on our wood stove in the winter time. LOL, had to go to the Library in Smithville Missouri and look for a bood with recipes in it. Didn't have all the technology. My sons are really into the hunting thing, One thing my husband taught them was there is no beer or alcohol in deer camp, so when they are in the woods they keep the tradition going. Just wish I could say that about all other hunters.

Still waiting to hear from Dr. Edwards, think I'm gonna try calling again today.

Sure hope your knee gets better and you start healing.

Bec started to sign out b4 I saw your post. Sounds like lots of work doin apples, maybe next year I'll have enough energy to do apples again. Never was much at gardening but used to do all of the canning and such. The way things are going we might have to start living off the land again.LOL

Hope we don't get too cold this week. It would be nice if winter holds off for a while longer.

Jeanie... apples are a measure of work but the rewards are well worth it... my house is smelling so good right now! My daughter LOVES apple butter and toast, and cinnamon applesauce on cornbread bread made with bacon grease in the iron skillet! Yum Yum she loves it. 

Sorry you were sick this weekend hope that ole nasty is all gone. I think it's WONDERFUL that you husband taught your son's not to drink and hunt.  He sure has my respect for that!

Jan, glad to hear you are feeling  better today.  I continued my BD celebration yesterday with dinner at Outback.  For the first time since WLS I was able to eat a meal in a restaurant.  Hubby and I split a prime rib dinner.  I had a cup of soup, half a sweet potato and about 2 oz. of prime rib.  It was delicious.  I went hungry so maybe that's the secret.  I did feel a little guilty after the meal thinking I ate too much but when I thought about it, I didn't.  Before WLS, I would have had my own plate of prime rib and it would have been more than 2 oz.

My son said the nicest thing to me yesterday.  He said, "You're not fat anymore."  I told him that's the nicest thing he's every said.  His response was, "I have told you I love you a few times." 

I'm really cutting back on the carbs.  Now, I need to get to the gym and exercise on a regular basis.

It's another dreary day in Kansas City.
