Cora,
I have a lot of recipes, because I am so in agreement with you. I can not stand the plain ol chicken, turkey or pork. I would be more than happy to email them to you. My list keeps growing bigger and bigger. This past weekend I made a cheesecake, it was fabulous, my husband even loved it and I took it to other folks who werent into the artificial sweetners and they raved about it. It was a lot easier than I thought it would be too. And was my first time actually making a baked cheesecake. I am already brainstorming ways to change up and get a variety in cheesecakes.
I am putting together my own lil cookbook currently as my recipes keep expanding. I have found a lot on the recipe portion of this website, and use the South Beach cookbook a bit as well. But when I look over a recipe I tend to tweak it a bit with spices or other ingrediants. Just shoot me an email and let me know if you are interested. My cousing just had surgery about 2 mos ago and she and I share recipes all the time.
One note on the meat, I love Italian foods, so I will make spaghetti sauce or alfredo sauce and put that on my meat. In place of the noodles I use julienned zuchinni or spaghetti squash. My kids never taste the difference. You can also slice the zuchinni thin and replace lasagna noodles with it. (got that idea from Angie)
A great spice for chicken is lemon pepper, or Mc Cormick makes a lot of "grill spices" that you can pick up just about anywhere. Just sprinkle it on there. They have a fab. Gourmet burger spice that I put on any kind of meat. Pampered Chef also has some great spices and rubs you can use. It is all trial and error.
A friend of mine and I have a saying, we are both WLS patients. For what lil we get to eat, it better taste wonderful!!!
Again just shoot me an email and I will be more than happy to share. Most of them take very lil time. I have 2 active kids and time is not always a benefit I have.
Have a fabulous day!!
Here is the cheesecake recipe I found on here. Just had to share because it was DELICIOUS!!!
BAVARIAN APPLE CHEESECAKE
Crust:
1/3 cup granular Splenda or equivalent liquid Splenda
1/3 cup plus 1 tablespoon butter, softened
1/4 teaspoon vanilla
1 cup Carbalose flour
Filling:
16 ounces cream cheese, softened
1/2 cup granular Splenda
1/2 teaspoon vanilla
2 eggs
Topping:
2 cups granny smith apples, peeled and sliced, 8 ounces (don't slice too thin)
1/3 cup granular Splenda (do not use liquid Splenda)
1 teaspoon cinnamon
1/4 cup sliced almonds
In a medium bowl, beat the first 3 crust ingredients on medium speed; stir in the flour until a soft dough forms. Pat onto the bottom and just slightly up sides of a 9-inch springform pan. Set aside.
Place the apples in a single layer on a baking sheet. You may want to line it with a silicone liner because the apples will stick. Cover with foil and bake at 400º 15 minutes.
Meanwhile, in the same medium bowl that you used for the crust, beat the cream cheese, 1/2 cup Splenda and 1/2 teaspoon vanilla until fluffy. Add the eggs; beat on low speed just until combined. Pour into the prepared pan. Arrange the warm apples atop the filling.
In a small bowl, mix 1/3 cup granular Splenda and cinnamon. Sprinkle the almonds evenly over the apples, then cover with the cinnamon-Splenda mixture. Bake at 400º 40 minutes until golden brown. Cool, then remove the sides of the pan.. Chill at least 4 hours before serving.
