Sheri's fauxtato salad

1 large cauliflower, steamed (or boiled but not mushy)florets chopped into chunks 
1/4 cup Hamish Bits TVP (you could use BacOs or real bacon pieces as well)
4-5 scallions
chopped 1/2 cup finely diced celery (very fine, strings are bad on pouches!)

4 hardboiled eggs, peeled and chopped      
4 tbsp low fat mayonnaise
      
1/3 cup 0% greek yogurt     
1 tablespoon mustard (your choice!)
      
1/2 teaspoon kosher salt

1/4 teaspoon black pepper
1/4 teaspoon paprika
 

1/2 cup stats
104 cal
5.5g fat
7.6 carbs
7.6 protein


I haven't tried this but everyone is going crazy for it and she had a pic, it looked just like potato salad YAY! ;)

We tried this tonight!! MmmMmmMm it is SOOO good!! Susan couldnt find the hamish bits so she got real bacon bits, she actually found the greek yogurt, dunno what the difference is tho. Thanks for posting this, it really is yummylicous!!

Awesome Andy! I'm glad it was good.  I can't wait to try it.  I took the buffalo chicken dip to a BBQ last night and everyone was raving about it.  Its really good too.  Greek yogurt, has high protien and low sugar.  You can eat it like sour cream on a pototo, or add some splenda and fruit its really good, I like to put it in my smoothies, it makes them so creamy.  ;)
