Jan asked me to post the protein souffle' recipe again so here goes...

Preheat oven to 350....spray ramekins or muffin tins w/cooking spray

Mix:  (I use a blender)

1 c milk              2 eggs

3 tbsp baking mix     3 tbsp brown sugar splenda

2 scoops protein powder    1 tsp baking powder

Seasonings....cinnamon, allspice, nutmeg...whatever goes w/the fruit you use.

Fruit &/or nuts.....peeled, chopped apple or pear, banana, dried fruits, canned pumpkin

Place the fruit &/or nuts in ramekins, cover with blended mixture.  Place into a larger container and put enough ho****er in large container to come halfway up the sides of the ramekins.  Bake for 50 to 55 minutes.  It is warm and very filling and goes down nice and easy if you eat it slow.  Especially if you have a grouchy pouch.

Here's where I do my own thing....

If I use banana, I will puree half with the mixture and cut up the other half to put in the ramekins.  Sometimes I will add a couple of tbsp of PB2 to the blender and get a peanut butter/banana souffle'.  (Makes you think of Elvis)  I've also used canned pumpkin (about 1/3 cup) with the banana (usually requires a little more splenda since the pumpkin is so strong).  I do pears and dried cranberries or cherries.  Banana and pecans (mmmmm.....tastes like banana nut bread).  Apple and cranberry is good too.

I use vanilla protein and sometimes strawberry/banana protein and add the banana as before.  I've tried chocolate but it's too strong for me.  I also use brown sugar splenda b/c I prefer the taste but I'm sure plain splenda will work too.  I also try to use lo-carb milk, if I have it.

Just use your imagination and combinations you like.  I know somebody used orange protein once and loved it.

Newbie when you get out about what 3 weeks this is a really good way to get in your protein...it will make 4 ramikins ...so that would be with my protein powder  i would get 20 grams per little ramikin....so you can see you could get some serious protein this way...
