Well, of course you can! How did you find out about my meatballs? LOL.....I will dig it out here in a bit and do you want me to post it here or email it? Hi guys,
Those of you who were at the COF Christmas Party, these meatballs are similar, but not exact-I made a couple of batches and put my own twist on it-and this is what I have come up with-and so far, everyone loves them.
2# ground beef or chuck
1 cup dried bread crumbs-I use crushed croutons-italian or garlic and cheese
2/3 cup FINELY chopped onion
1/2 cup milk
2 Tablespoons chopped parsley
2 teaspoons salt
1/8 teaspoon pepper
2 eggs
2 bottles chili sauce (12 oz each)
2 jars grape jelly (10 oz each)
Heat oven to 400, stir together all ingrediants except the chili sauce and jelly. Shape into 1" balls and place on ungreased rectangular pan. Bake, uncovered, 20 minutes or until center is no longer pink and juice is clear.
Heat chili sauce & jelly in dutch oven pan, on low, medium low, until melted, stirring frequently until well blended. Once sauce and meatballs are done-place meatballs in crock pot, cover with all sauce and simmer in crock pot for 1-2 hrs or longer-depending on what you like. ( I leave mine in crock pot for 4-6 hrs-they melt in your mouth they are so tender)
**Hint for the chili sauce: At our walmart here, they have SOME chili sauce over by the mexican food items, but the chili sauce (generic is okay) that I use is over by the ketchup and marinades. Its like 1.36 per bottle. For the grape jelly-make sure its jelly, not jam-AND you can use sugar free-for a sweeter tasting sauce-you can use a little more jelly-for a little more zest, use less......depending on your likes-you can try it using a little less and add jelly to it as its cooking, to your liking.
Also-on the burger, the less fat there is, the better-to keep the grease out of the sauce and marinating, it wont be greasy. I dont use ground sirloin, but I do use a better quality ground chuck.
Ok guys-let me know what you think-they really are great! Everyone at our superbowl party ate them like crazy and wanted the recipe-hope you all like them too!! They are just as good as leftovers too!
