1 cup peanut butter
1 egg
1 tbsp vanilla
1 cup Splenda
Mix and roll into balls (about walnut sized) and flatten with fork dipped in Splenda. Bake at 350 for 12 minutes.
TIPS
-Do NOT overcook -- they will get crumbly since there's no gluten
-Peanut butter is naturally low sugar - the low sugar kind only reduces it by 1g per serving. to keep them from crumbling use 1/2 cup Splenda and 1/2 cup of splenda brown sugar blend. true you will have a small amount of sugar increase but not much..... Hi, Cor:

I use the Smucker's Natural Peanut Butter then usually have to use a little regular Peanut Butter to help it stick together. Also, when I just used regular Splenda I thought they were way too sweet. So 1/2 cup of SPLENDA BLEND and then 1/2 cup of BROWN SUGAR SPLENDA BLEND. I'm thinking about adding some SF chocolate chips to them next time. Not sure if it'll work but I may try it. Enjoy!
