I think I need to come to Brandy's house for dinner....you are making some good sounding food. Have you checked out Eggface's blog? She has some amazing WLS recipes. I've been finding a few things I can eat but I have a picky pouch (he's named Oscar the grouch pouch) so I have to be very careful. And I haven't tried the carb comfort from Schwanns, I usually have very little control when it comes to sweets...even reduced sugar sweets. So is the Mocha Creme have a pudding texture? I'm fascinated with that one, where did you come up with it? Sounds good. I've added sf preserves to low fat ricotta but have never thought of using cottage....hmmmm
Ok, I too have a weakness for sweets. The carb comfort ice cream is what my mom keeps in her freezer for when I come to visit. She lives half an hour away and I only get down there every couple of weeks. So it's a treat for me.
The ideas for the cottage cheese creme recipes are variations from what I have in my South Beach Diet cookbook. They use ricotta cheese, but I think cottage cheese is just as fine a sub. I buy my cottage cheese in 5 pound tubs from Osceola Cheese. (my hometown) To me, the texture is more like a mousse than pudding. It's yummy though.
I check out eggface's blog regularly and am looking forward to trying her microwave cake recipe soon. I've tried the protein ice cream a couple times, but haven't perfected my technique yet.
I check out the RNY board daily to see what everyone over there is eating. There are several "foodies" with blogs who have some excellent ideas I've used or adapted.
