Mom's Family Pork Steak Casserole

2 pork steak cut in bite size pcs.
4-6 small or new potatoes chunked up.
3-4 carrots cut in bite size pcs.
2 ribs of celery cut in bite size pcs.
1 small zuchinni cut in bite size pcs.
1 large onion cut in pcs.
1-2 cups chopped cabbage.
2 cloves of garlic - I grate mine up or dice small.
1 cup or a large handfull of frozen greenbeans.

I flour the pork steak and fry in evoo or canola oil in a large electric skillet.  When it is browned add the potatoes which you can dust in the flour also and add to the skillet.  When they are browned add the rest of the veggies except the squash and cabbage.  When the carrots and celery are tender add the cabbage and the squash and 1 to 2 cups of water.  Mix well and it will make its own gravy. Cover and let simmer until everything is done.

This a comfort food for me as my Mom would make it for us.  I finally found her recipe and have tweaked it a bit.  The meat is so tender.  I usually add salt and pepper and my own version of "BAM" Emeril's seasoning which I make from all my herbs I grow.  Let your imagination go!  You can add anything to this or leave anything out.  I did not use cabbage in it the other night as I was not running over to the garden to find a head or to the store.

Enjoy!

Thanks Shannon for sharing this recipe with us!  I've copied and pasted it into my recipe folder.  Going to plan on making it within the next couple of weeks.

Thanks again!
