yummy peanut butter cookies---I just made them---sooo good

God Bless Paula Deen for flourless peanut butter cookies!

1 cup peanut butter
1 egg
1 tbsp vanilla
1 cup Splenda

Mix and roll into balls (about walnut sized) and flatten with fork dipped in Splenda.  Bake at 350 for 12 minutes.  

TIPS
-Do NOT overocok -- they will get crumbly since there's no gluten
-Peanut butter is naturally low sugar - the low sugar kind only reduces it by 1g per serving.

to keep them from crumbling use 1/2 cup Splenda and 1/2 cup of splenda brown sugar blend. true you will have a small amount of sugar increase but not much.....

I just baked some of these cookies.  They are DELICIOUS!  I've even hidden them.  I may re-consider and let my dh and boys have a couple.  (I made a double batch).

Hey Angie, thanks for posting that!!! My son just made these for me, I was feeling a little sorry for myself..I went to the mall and brought mrs. fields cookies for everyone at home, I ate one choc. chip out of a cookie...can't beleive I did that!! first "real" sugar i've had in over 6 mo's, anyhow, came home , saw your post and thought YESSSSSS! for me...now if only I could find s/f choc chips to add...hmmmm. Anyhow thanks so much  you are a lifesavor..or sugar savor lol!
