Bec PASSED her leak test!
Good Morning Mama Jan & MO Peeps!
Just got off the phone with Bec, she passed her leak test with flying colors! She took 4 laps around the nurses station last night!
Bec wanted me to thank you all for your prayers and to let you know she is FANTASTIC!
She even said she may actually go home later this afternoon! I'm going to meet Janet & Megan at the hospital around Noon. (Yes, it's still a surprise to Bec!)
Well, I'd better scoot. I made a batch of home made chicken broth in my 18 quart Nesco. I need to strain it and get it packaged up for Bec. I'm also going to debone the 2 chickens and remove the skins and pack them up for her as well. I had always used the Swansons Chicken broth until I found this recipe and I've got to tell you - it is DELICIOUS! lol! I wish I had some of it my first couple weeks after surgery.

I'm also going to debone the 2 chickens and remove the skins and pack them up for her as well. oh wow i hope Janet gets there to see her before she goes home. lol
that would be a bad deal and you might have to break the news to her so she wouldnt go.
Im so happy that she is feeling great. and if they let her go home today it will mean that as far as the doctor is concerned she is healing great already.
so you better hurry and get all the chicken broth packaged up so you can take it to her today sounds to me like....
give her a hug from me when you see her today. tell her im so proud of her.

GMTA!! (Great Minds Think Alike) I just finished straining the chicken broth and packaging it up. I also deboned and took the skin off the chickens and packaged up the chicken meat. They do have a small refrigerator in their hotel room so it will be okay even if they have to stay another night.
I hope they don't release her until Janet gets there either! I'm getting ready to jump in the shower and get ready. I plan on leaving here around 11:30. Can't wait to see Janet again and meet her daughter Megan!

A Nesco is a Roaster Oven that you can slow cook or actually bake in up to 450 degrees. I actually have a Rival one. Had a Nesco for years and actually it actually burnt out. I bought this one at Walmart a couple years ago for around $40. The cook well is removable. It's a great thing to have in your kitchen.
Here's the recipe for the chicken broth I made for Bec. I got it from Susan Leach's Before and After book:
1 Whole 2 1/2 to 3 pound chicken
3 Carrots, cut in half
3 Celery Stalks, cut in half
1 Large Onion, quartered
2 teaspoons of kosher salt
1/2 teaspoon whole peppercorns
Place all ingredients in a 8 to 10 quart stockpot and fill with cold water to cover. Bring to a boil, then reduce the heat and simmer, skimming any foam as necessary, for 3 1/2 to 4 hours, until reduced by about one-third. Carefully transfer the chicken to a bowl and pout the stock through a fine mesh sieve set over a large bowl or pot, pressing on the solids to extract as much liquid as possible. Cook the stock at room temperature. Cover and chill until the fat has solidi-fed, at lease overnight and up to 3 days. Scrape off and discard the fat.
WLS 1/2 cup portion: Calories 40, fat 1.5 gr, carbs 4.0 gr, protein 3.0 grams.
I then debone and take the skin off the chicken and freeze the chicken for use later. The chicken just falls off the bone..at least when I cook it in the Nesco. Have never done it on top of the stove as she recommends. Last night I turned the Nesco on to 275 at 9:30pm and turned it off this morning at 9:30am.
