Here is the recipe you requested I hope your husband will like it! Wild horses could not drag it out of me about the zzz~keen~eee!!!
Award~Winning R.B. Rice Zucchini Casserole
1 lb R.B. Rice Sausage
4 medium zucchini squash, peeled and coarsely diced
3/4 cup shredded carrots
1/2 cup chopped onion
6 tablespoon butter or margarine
1 reg box Stove Top Stuffing Chicken Flavor
1 cup sour cream
1 can cream of chicken soup
Brown sausage, drain and set aside. Cook zucchini until slightly tender and drain (I did mine in the micro). Saute' carrots and onion in 3 tablespoons of butter or margarine. Stir 1 1/2 cups of dressing soup and sour cream together. Gently fold in squash, carrots and onions and add sausage gently mix till well coated. Pour into greased casserole dish. Sprinkle on top the remaining stuffing and butter or margarine. Bake at 350 degrees for 30 minutes.
This recipe is great served with fried apples in the fall.

This recipe sounds wonderful! Luke and my dh don't like stuffing (however Jake and I do) so will try it. They may like it since it has the sausage and other items in it. I'm guessing we could make our "own stuffing" with whole grain breads and home made chicken broth. Would be better for us. Anyways, I'm going to try this in the next few weeks. I've already prepared my menu and went grocery shopping for the next two weeks or I would make it sooner.
