Receipe for tuna something....

I am wondering if anyone has come up with anything creative for something to eat with Tuna? I saw a recipe for tuna with avocados but I dont remember the other ingredients??? Does anyone remember seeing this? Please, dont judge me but I am 2 days short of 4 weeks out and I need a little variety as the same ole' is getting boring.. Yes, I did my research and I knew I was going to be stuck on certain foods for a while, but when your actually doing it... It is much harder.. For me anyways...

Girl I soo know what you mean about the same ole same ole food---BORING!!!  Since suregery anything I eat has to be spicy or really well flavored.  Im into mexican and chinese and cajun and anything flavorful nowa days.  I don't know the recipie but I found one that you might be able to use---hope this helps

AVOCADO AND TUNA SALAD

Ingredients:



2 Avocados , Not really very ripe

1 can Tuna (9 1/4 oz) (I use tuna packed in water)

1 Tabl Lemon juice

2  Tabls Mayonnaise (It can be low calorie mayonnaise)

1/2 Teas Dry mustard

Pinch of salt



Dressing:



Juice from 1 Lemon

1 Small garlic clove crushed very fine

Pinch of salt

Few sprigs chopped parsley for decoration



Put in a shaker, and shake very well. Taste, and add more

salt if needed.



Making the filling: Drain the Tuna. With the fork break the

tuna meat, and add all other ingredients. Mix it well till

it becomes really fine.



Peel Avocado. Cut in 1 cm thick rounds, and very carfully 

slide it over it's pit and arrange it over a nice serving

plate.



With a teaspoon fill the avocado in it's center. Sprinkle

over all with the dressing. Toss over the chopped parsley.

Cover with nylon seal wrap, and keep in refrigerator till

you serve.

Here's a dip

1 can flaked tuna, drained
3 tablespoons lemon juice
1 med. avocado
1/2 teaspoon salt
1 tablespoon horseradish

Directions:

Peel and pit avocado; mash well. Add remaining ingredients, mix lightly, cover and chill. Serve with crackers.

I know you can't do crackers but maybe just eating the dip without anything to actually DIP.

Curried Tuna Salad with Snow Peas and Avocado

ingredients
  • 2 teaspoons yellow mustard seeds
  • 1/4 cup vegetable oil
  • 1 teaspoon curry powder
  • 4 ounces snow peas, trimmed
  • 2 Hass avocados, halved, pitted and sliced 1/4 thick
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons finely chopped dill
  • Pinch of sugar
  • Salt
  • 1 red bell pepper, thinly sliced
  • 1/2 small red onion, thinly sliced
  • One 6-ounce jar of Italian tuna packed in olive oil, drained and lightly flaked
  •  
directions
  1. In a small skillet, toast the mustard seeds over moderately high heat until they pop, about 1 minute. Transfer to a small plate. Add 1 tablespoon of the oil to the skillet and when it is hot, add the curry powder. Cook over moderate heat until fragrant, about 1 minute. Scrape the curry oil into a medium bowl and let cool.
  2. In a small saucepan of boiling salted water, cook the snow peas until bright green, about 1 minute. Drain and cool under cold water; pat dry with paper towels. Cut the snow peas lengthwise into thin strips.
  3. In a medium bowl, gently toss the avocado with the lemon juice. Whisk the vinegar, dill, sugar and remaining 3 tablespoons of vegetable oil into the curry oil and season with salt. Add the snow peas, red pepper, onion and tuna to the dressing and toss. Gently fold in the avocado and serve.
Tuna-Stuffed Avocados

INGREDIENTS
  • 2 (3 ounce) packages cream cheese, softened
  • 1/4 cup mayonnaise
  • 2 tablespoons finely chopped onion
  • 1 tablespoon lemon juice
  • 1 teaspoon celery seed
  • 1/2 teaspoon pepper
  • 1 (6 ounce) can tuna, drained and flaked
  • 3 ripe avocados
 

DIRECTIONS

  1. In a small mixing bowl, beat the cream cheese and mayonnaise until well blended. Add the onion, lemon juice, celery seed and pepper. Stir in the tuna. Cut avocados in half lengthwise; remove pits. Spoon tuna salad into avocado halves. Serve immediately.

This is my favorite tuna recipe, it tastes a lot better than it sounds and looks.   2 cans of tuna,drained 4  oz of fat free cream cheese 1/3 cup of buffalo wing sauce

I prefer the Budweiser mild & tangy wing sauce

I was told avacados were very high in fat...is this not true?

I like tuna with mayo and dill seasoning rolled up in sliced cheese.

Avacados are actually good for fighting high cholesterol too! Im trying to find ways to sneak them into Rick's diet.

Man those all sound good, LOL heylookitsangie ill get you that chicken recipe it was really good, LOl first I have to finish writing down all the great ones you posted!!! The rest on this post look good too will have to try them all!! I love to cook, and im trying very hard to collect new recipes that hubby will like, we can both eat and both be healthy!! Sugar your hubby sounds like mine, when we met he thought the only veggie in the world was green beans haha, he is a bit better now that I have got him to try others but it is a constant battle with him. Dont get me wrong tho he LOVES to eat haha, however he never seems to gain much and eats 10 times what I do the bum haha!!
