RIPE TOMATO RELISH (as requested)

RIPE TOMATO RELISH


1 peck ripe tomatoes
3 large green peppers
3 large red bell pepper
9 medium onions
1 stalk celery

Grind all above. Add one cup salt (table/canning salt)
mix and let stand over night.

Drain all liquid.

Add:
3 cups white vinegar
2 cups sugar / Splenda?
1 cup horseradish
3 tsp cayene pepper

DO NOT COOK

Place in jars (I used 1/2 pint) and water bath for 10 minutes.

Makes approx. 5 quarts

that sounds so so good, i love horseradish and anything hot and spicy ...one questions how many tomatoes is a peck????

Its about 2 gallons. So, if you have a two gallon container to gather then in or to measure that should do it. This is a very easy recipe to do. Hope you like it.
