Zucchini Relish Recipe
Zucchini Relish
10 cups grated zucchini
4 cups chopped onion (I do this in my food processor)
Cover with water and stir in 3 T salt
Let set overnight
Rinse well with water put in large pan and add the following:
3 cup chopped red and green pepper
Mix up the following and pour into pan
2 1/2 cups apple cider vinegar
6 cups measurable Splenda
1 T celery seed
2 T corn starch
1/2 t pepper
1/2 t nutmeg
1/2 t tumeric
Bring to a full boil for 3 minutes
Put in prepared steril jars and seal.
Makes about 6 pints
