Chicken Enchilada Soup....mmmmmmm good

I was at Sam's Club one day and they were giving out samples of a new item from "Old El Paso", it was Chicken Enchilada Soup. I looked at the can, like most of us do (now) and it was low in Carbs, high in protein, low in fat and incredible in flavor.  Once I got home, I decided that I could make that. So,  I began to search for a recipe and created my own. I do not have all of the details, but will get it all written out here soon and will pass it along to anyone that wants to try it. I am planning to make it for our Christmas Party for our December meeting here in Lee's Summit.
