Dumping Syndrome

I recently responded to question regarding dumpiing syndrome. A member, ClaudetteK, asked me to copy and paste my response here. The question that was asked which I was responding to is as follows:
Is it possible to dump on starch? like bread? I have been able to eat it up till now, no problem, but I think in the last couple of weeks I have dumped on starches (like bread, crackers, etc).
My response to this question is below:
Starches such as white bread, crackers and pasta have a very high glycemic index. While all carbohydrates are converted to sugar this really isn't the issue. The issue is how fast this conversion takes place in addition to how fast foods cross the gut and enter the bowel. Starchy foods such as those listed above are very rapidly converted into simple sugars and cross the gut quickly. This rapid transit across the gut causes dumping syndrome as it brings lots of fluid into the bowel with the sugar.
Whole wheat breads, oatmeal, whole wheat crackers and even whole wheat pasta have a much lower glycemic index and generally do not cause dumping syndrome. Again, all carbohydrates are eventually converted to glucose, the bodies utilzable sugar, but this process does not occur rapidly with whole grain foods. Stick with whole wheat and or multi grains if posssible.
One simple test to determine if a carbohydrate rich food is actually whole wheat or multi grain (i.e. unprocessed), is to take a look at the fiber content. If it has at least 2-3 grams of fiber per serving, it is generally a low glycemic index food....this is a good thing.
