If ya love mashed taters but cant eat them cuz they turn to sugar, here's a couple recipes I found that kind of take the place of them. Mock Mashed Potatoes INGREDIENTS: · 1 head cauliflower, cut into florets (discard core and large stems) · 1 (14 ounces) can chicken or vegetable broth (or homemade - about 1-3/4 cups) · 2 Tbsp butter · 2 ounces cream cheese · 2 Tbsp sour cream · 1/2 cup shredded cheddar cheese · 1/4 cup sliced green onions, white and green parts · Salt and freshly ground black pepper to taste (I use Mrs. Dash Seasonings) PREPARATION: Place cauliflower florets in a large saucepan. Add chicken broth and bring to a boil. Cover and simmer until very tender, about 12 minutes. Drain thoroughly through a fine sieve and return to the pot over low heat. Cook about 2 more minutes to dry out excess moisture, stirring constantly. (It's okay that they break apart.) Pour cauliflower into food processor fitted with the metal blade. Add butter, cream cheese, sour cream, cheddar cheese, green onion, salt, and pepper. Pulse to combine. Reheat before serving, if necessary. Cauliflower Gratin Recipe Three cheeses and ham or ground turkey give a rich depth of flavor to bland cauliflower. The meat may be omitted, if necessary. Cauliflower gratin makes a great side dish, but consider it also for breakfast or brunch. Great for low-carb diets. Add chicken broth and bring to a boil. Cover and simmer until very tender, about 12 minutes. Drain thoroughly through a fine sieve and return to the pot over low heat. Cook about 2 more minutes to dry out excess moisture, stirring constantly. (It's okay that it breaks apart.) Pour cauliflower into food processor fitted with the metal blade. Add butter, cream cheese, sour cream, half of the cheddar cheese, green onion, salt, pepper, and eggs. Pulse to combine. Fold in ham, turkey or bacon pieces. Spray an oven-proof casserole with vegetable oil. Pour cauliflower mixture into casserole dish and sprinkle evenly with remaining 1/2 cup cheddar cheese and all of the Parmesan cheese. Dust lightly with paprika. Bake in a preheated 375 F. oven for about 45 minutes. Yield: 6 to 8 servings

Andrew, Thanks for sharing the recipes. I've got them copied down. I use cauliflower all the time now. So glad you and your wife will be at the meeting Monday. I love mashed cauliflower. I think Red Robin or one of those chain restaurants serves it. I know I had is somewhere and it's in the South Beach Diet book. Thanks for the recipes because yours sound better than what's in South Beach. I'll see you Monday night. Can't wait to meet you and the Mrs. Love and hugs to you both. Lana

well i love mashed califlower but never tried all the ingredients in it like that sounds really good. I may make some of that for dinner tomorrow. LOL thanks Jan

Thanx Andrew for the recipe, do you think turnips would taste good this way too? I love turnips but haven't tried them yet I did finally cook me some cabbage and it tasted great. This WLS has helped me know my portions real good, and I don't know about you all but I'm still not hungry per se, but I know that I have to eat and after a while when I haven't had food I get a little nudge that says it's time to put something in your pouch So I have been copying recipes as you guys post them, but I haven't tried them yet, I am going to try the protein balls soon too. Ya'll are so welcome, Barbara I havnt thought about doing that with turnips, I love turnips, that might be pretty good too. I had a few bites of fresh turnips a couple weeks ago and handled them just fine!! Andrew
