RECIPE ALERT: Moist and Rich Carrot Cake

Moist and Rich Carrot Cake 2 C. Splenda 1C. Lighter Bake or unsw. applesauce 4 egg whites 2 tsp. vanilla 2 1/4 C. flour 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. salt 3 C. grated carrots 1 C. raisins 1 C. chopped walnuts (I add) 1 can crushed pineapple, drained Frosting: 6 oz. light cream cheese 1/2 C. Splenda 4 oz. Cool Whip Lite 1/2 tsp. vanilla Preheat over to 375. Coat a 9x13" baking pan with cooking spray. In a mixing bowl, beat Splenda, Lighter Bake (or applesauce), egg whites, and vanilla. In another bowl, combie flour, baking soda, cinnamon, nutmeg and salt. Add to Lighter Bake mixture. Blend well. Stir in carrots, raisins and nuts. Spread batter into pan and bake for 25-35 minutes or until wooden puck comes out clean. Cool on rack. Spread evenly with frosting after cooled.

It is Mel Mel....... But, I OF COURSE have to watch the raisins and nuts.... I made it in my "Test Kitchen" LOL to use for Thanksgiving.... I think this will be tasty enough for those that even still eat sugar.... I am going to have my mom and son taste test it to, so I don't "embarrass myself"...lol The frosting is tooooo DIEEEE for..... I think if I ever make a cake, no matter what the flavor, this will be the Sugar Free Frosting I always use.... I dropped one of the beaters off the mixer and BOTH my poodles pounced on it...they had white frosting UP their noses....I had to get each one of them, hold him down and clean their faces off.... So, it's POODLE APPROVED..... Let me know what you guys think, I do not list recipes that I try that TASTE BAD TO ME...those get thrown away, the recipe card itself and the baddddd food.... I made LENTILS yesterday and it called for balsamic vinegar.... WOW that was STOUT..... I couldn't eat it or stand the smell, so those...went in the TRASH... Sh p.s. the Pineapple makes it.....and it's the SMALL CAN....okay? I couldn't remember where I got that recipe, but the person mentioned pineapple...and I went for it. S
